Best carrot recipe I've tried yet! Big hit with everyone. Great way to provide a vegetable side dish to a dinner.

White Cheese Chicken Lasagna

Good, but don't over do it on the spinach. I rounded up to the next whole bag (trying not to "waste"), and it overpowered the taste of the other ingredients. Follow the recipe.

Playgroup Granola Bars

Reviewed: Oct. 24, 2009
I'm giving this 5 stars because I've made them twice, doubling the recipe each time, I'm able to substitute the add-ins that my family likes (mini-marshmallows, 1/2 c peanut butter) for the cranberries and coconut, and both adults and kids think these are awesome. My kids refer to them as "cookies" (cookie bars) and adults refer to them as "granola bars". Either way, they work for breakfast or dessert.

Slow Cooker Chicken Taco Soup

The *best* chicken taco soup recipe! We used cooked rotisserie chicken from the store and substituted chicken broth for the beer. The longer it cooks, the better it is! Great alongside some warm cornbread.

Great soup that's really easy to make, you can interchange lots of veggies, and it's still really good. We omitted the pasta and added extra zucchini. Great recipe.

Yogurt Chicken

Reviewed: Oct. 23, 2009
Very yummy! The chicken was really moist and delicious. I only had unseasoned bread crumbs, so I seasoned them with some cajun spices. It turned out great. I do recommend cooking them on a wire rack if you want them more crunchy. In a glass dish, the undersides became a little soggy but they were still really good.

Old Settlers' Baked Beans

I adapted this recipe so that I could use the Van Camp's original baked beans as a base. It was fantastic! I got rave reviews from everyone, even my pickiest eaters. This takes baked beans from standard side dish to main event quality.

Cajun Style Baked Sweet Potato

Reviewed: Aug. 26, 2009
Whoa, there! These were loaded with spice, and my husband and I actually couldn't finish ours. I was giving them a trial run before making them for guests the following night, but I decided to go with a different potato recipe after trying them. They could be good if the seasoning was merely sprinkled over the top before baking, but unfortunately I probably won't give them another go. Thank you for this recipe, though, it was a different approach to sweet potatoes.

Cowboy Mashed Potatoes

Reviewed: Aug. 26, 2009
Good, on par with basic mashed potatoes with cheese, sour cream, etc. I doubled the batch and served them to guests. This is also a good way to incorporate more veggies into your kids' diet. I used canned carrots for simplicity, and they worked well.

Twice Baked Sweet Potatoes with Ricotta Cheese

Reviewed: Aug. 26, 2009
This is flavorful and a good diversion from classic sweet potato casserole. Use a light touch with the sage, though. I thought it tended to overwhelm the rest of the flavors. I'm not sure if we will try it again, but if I do I will be sure to omit the sage.

Pizza Without the Red Sauce

Reviewed: Aug. 24, 2009
I had high hopes for this, but here are my adjustments if I make it again: omit jalapenos (they are not consistent with the flavor of the rest of the ingredients), reduce or omit completely the onion, reduce garlic by 1 T. All in all, this was too spicy to enjoy the taste of the feta cheese, pesto, and tomatoes. Some of that spice came from the jalapeno, but the onions and garlic dominated the taste. My husband and I could only eat 2 pieces at a time. My advice - great recipe, but go lighter on the hard stuff.
