Easy Pesto

Reviewed: Sep. 13, 2009
I've never made pesto before and was a bit intimated - now that I made this super easy pesto, I wish I had done it earlier! Three cloves of garlic definitely gives it a kick, but a good one! I love this recipe and am very unlikely to go searching for another one. I will be using this pesto tonight to make pesto-stuffed pork chops. yum!

Green Bean Casserole Remix

Reviewed: Sep. 8, 2009
For flavor I would give this five stars, however the casserole was very runny so I dropped it down to four stars. Maybe adding less half-and-half would help, or adding cornstarch to thicken it up. I will make it again but will need to play around with it so that it's not so runny next time. Flavor was great though!

Rosemary Pork Roast

Wonderful. My entire family loved it, kids included. I too used smaller portions of all the ingredients, and it was easy, tasted great, and juicy. Definitely added to my repitoire.

Orange Cake

Reviewed: Aug. 27, 2009
This cake is incredibly moist and delicious. I served it as "Lemony Orange Cake" b/c that described it better. The only thing I did different was once the cake was cool, I put it back in the pan and poured the hot glaze over it, making sure the excess ran down the middle & sides and let it soak for 10-15 minutes before removing. This completely encased the entire cake in glaze and locked in the moisture. It was wonderful!

Moroccan Chicken and Whole Grain Couscous

Reviewed: Aug. 26, 2009
I only used one can of chicken broth,as the reviews said it was watery and found that to be plenty. While cooking I tasted, and had to bump up the amount of spices, also adding garlic, cilantro and pepper flakes (we like spicy). I made the dish in the afternoon, refrigerated and served that night. It thickened and had a nice flavor. My family really liked this and I'll make it again.

Cajun Chicken Pasta

This was so good! I didn't change a thing. I'm not usually a big cream based sauce fan, but this was great. My boyfriend said that this was one of his favorite meals that I made. Next time I might try adding sun dried tomatoes for some tangyness.

'Out of Salad Dressing' Salad Dressing

Reviewed: Aug. 23, 2009
I gave this 4 stars because i made a few changes... Used 1/2 light mayo and 1/2 light sour cream in place of the mayo. I also cut back on the salt as the parmesan is pretty salty on it's own.. I also added some fresh cracked black pepper... Yummy!!!

Chipotle Honey Roasted Peanuts

Reviewed: Aug. 21, 2009
These nuts are incredible! I followed the instructions exactly, which is rare for me, and they turned out perfect. I did use a jar of unsalted roasted peanuts so mine were basically double-roasted. I was worried about the outcome--thinking they might taste burned--but they are wonderful. I don't think you can go wrong here!

Best Ever Jalapeno Poppers

Reviewed: Aug. 20, 2009
These were delicious and fairly easy, though they did take a lot of time. I had to scale the quantities way down because I only had eight or nine jalapenos from my garden and this recipe is obviously intended for a much bigger crowd than just my husband and myself, but we really enjoyed them. I will be making these again just as soon as I have more mature peppers on hand.

No Bake Cookies V

Reviewed: Aug. 17, 2009
I've tried several different No-Bake recipes over the years and this one is perfection! The cookies set up, but retain their fudginess, they hold together, but are melt-in-your-mouth, and they are splendidly easy to make, but taste like they should have been complicated. Superb!

Slow Cooker Pulled Pork

Reviewed: Aug. 11, 2009
After eight hours on low, I removed the pork to drain off the fat and root beer (I used a 20 oz. bottle) and to shred it. I almost left it at that because it was so delicious! But dinnertime was still two hours away, and I didn't want it to dry out, so I returned it to the crockpot on low and added a 28 oz. bottle of KC Masterpiece Original barbecue sauce. WOW! This is amazingly good and so easy - I'm sure I'll make it again! Thanks for the recipe!

Spinach Phyllo Cups

Reviewed: Jul. 12, 2009
If I could give this recipe more than 5 stars, I would. I made some changes based on the advice I found here and the results were STELLAR: 1.) Use Garlic/Herb Feta. 2.) Doubled the amount of fresh garlic used (we love garlic at our house) 3.) Add a half cup of Parmesan to the mixture. 4.) Diced Roma tomatoes on top of the mixture after it's in the shells (but BEFORE baking) 5.) Shredded mozzarella on top of the tomatoes. These changes resulted in an absolutely delicious winner of a recipe that is on my permanent keep list.

Caribbean Pasta with Shrimp

Reviewed: Jul. 1, 2009
I thought this was good but I'm going to make some changes the next time I make it. I used pepper flakes instead of chili paste. Next time I will cut down on the amount. I also used half a can of diced tomatoes. Next time I will use a whole can. I used orange juice instead of the orange liquer which worked out really well.

Cabbage Fat-Burning Soup

Reviewed: Jun. 29, 2009
I liked this soup a lot, and it didn't leave me feeling hungry. I split this recipe and made it for six servings instead of 15. I only used half a head of cabbage and added extra veggies, including chopped tomatoes, a can of garbanzo beans for protein, extra carrots and peppers and the whole can of green beans. I used half water/ half chicken broth for the liquid to add flavor. I also seasoned with plenty of cracked pepper and garlic powder and it added a nice taste to the broth as well. I didn't have any onion soup mix, so I added a beef boullion cube and minced dried onions as a replacement. In a couple of servings I've heated through with a polish sausage added in, and it makes a very nice addition to the soup. I will make this again!
