Kidney Beans and Corn

I gave this recipe 5 stars b/c I thought the combo of flavors were very good, however, I did make some changes. I used butter instead of olive oil to saute the onions and garlic, I used vidalia onions and doubled the garlic. I also drained and rinsed the kidney beans and added a can of Rotel tomatoes like another reviewer suggested. I also used frozen corn instead of the canned and cut the spices in half, omitting the cayenne pepper. I garnished with cilantro and served over mashed potatoes for something different. Tonight, I will use the leftovers to make Quesadillas. I think with these tweaks, it was pretty darn tasty. Sometimes you just have to make a recipe to suit your own tastes. This was a great recipe that was fast and easy, you could use what you have on hand which is nice.

One-Dish Chicken and Stuffing Bake

This dish is what made my boyfriend REALLY love me when we first started dating... it's one of his favorite things for me to make, and it's so simple! For added flavor, I always sprinkle the chicken with Poultry Seasoning before covering it with the soup mixture, and I add a little bit of garlic powder, paprika and a dash of chili powder to the soup mixture to give it more "oomph". I almost always add shredded cheese to the top before popping it in the oven to give it some nice gooey, cheesiness. Tastes great with roasted red potatoes!!

Quick and Easy Brownies

AWESOME! I had to cook these a bit longer than 30 min since I used a 9x13 GLASS dish but they came out great. Crunchy on top and CHEWY GOOEY on the inside...YUM!!!! I have never made brownies from scratch before ever (always used a betty crocker mix) but I can whip this up in a jiffy with ingredients on hand. I did omit the walnuts cuz I didn't have any but I will have to make them with them the next time! Thanks so much for posting!

Hash Brown and Pork Chop Casserole

After reading other reviews, I added an envelope of onion soup mix to the sour cream, soup and milk mixture. I added 4 ounces of cream cheese to the mixture to make it creamier. I cooked this in a large pan on the stove along with the potatoes for about 10-15 minutes before placing in baking dish. I used another reviewer's recommendation and placed half of the potato mixture in bottom of pan, laid the browned pork chops on top then covered with remaining mixture. This kept the pork chops moist and tender!

Mini Meatloaves

Made this last night and it was excellent. I made a few changes: I put it in a loaf pan instead of mini loaves, so I halved the glaze and I baked it for an hour instead of 45 minutes. I also found the mixture to be extremely wet, so I added another 1/2 cup of Oatmeal (making the total Oatmeal 1 cup) and it was perfect. Husband loved it, and is already planning meatloaf sandwiches with the leftovers. This will be added to our permanent rotation!

Seasoned Oyster Crackers

It's a great recipe, but these HAVE TO BE BAKED! My mother put them on a low heat in the oven, around 200 or so. Put them in a big, oven-safe bowl (or a cookie sheet if it's all you have). Every 15 minutes stir them around, do this for 1 hour. And there you go! The flavor just melts into the crackers, so much yummier!!! **if you don't have dill, substitute with some lemon juice

Rich Danish Waffles

Best waffle recipe! I had to make one change, because I didn't have regular milk, so I used low fat buttermilk for both parts of milk. They were still amazing. This recipe does make 12-16, and for my family, that is a lot. BUT the leftovers can be thrown in the toaster the next morning and they are still so crispy and yummy good. A lot of recipes claim to make great leftovers, well this one really does! These waffles were fluffy and have a slight sweetness. This will definitely be my new waffle recipe to lean on for perfect waffles. Thanks for sharing this tasty recipe with us!

Savory Cheddar Bread

I didn't have any dried mustard so I am wondering if this was the kick I was missing. I will definately make this again, just probably spice it up some more and use garlic salt instead. I didn't have onion salt so I added 1 tsp of onion powder and 1/2 a teaspoon of salt...I probably should have used a whole teaspoon of salt. But overall, it was a good recipe and I loved the texture of the bread!

Rainbow Pasta Salad II

YUMMO and SOOOO easy!!! I didn't have any tomatoes so I omitted them but my neighbor brought over some fresh grown cucumbers and they were GREAT in it! I used my Tupperware Quick Chef to get the onions minced well and used a bottle of Zesty Italian. I have a lot of leftovers so tomorrow Im gonna toss some parmesan on it as well.... definately a keeper and I'll be using this recipe when we go to bbqs and family gatherings! Thanks so much Jennieanne!!!

Best Ever Jalapeno Poppers

My hubby just loved these... he couldn't stop eating them! I chose to add a few ingredients from the Sausage Jalapeno Popper recipe on this site. I added 1 lb. cooked sausage to the mixture, omitted the bacon bits, and increased the cream cheese to 2 packages. I baked these at 350 degrees for about 20 minutes then put them under the broiler for a few minutes to crisp them up. I was very grateful for the triple dipping process... it made the coating stick very well! AWESOME appetizer... hubby said he could make a meal out of them with addition of the sausage. Don't forget to wear gloves... I did and paid for it all evening!

Sausage Jalapeno Poppers

These are super good! I added 1/2 cup shredded cheddar cheese to the mixture before stuffing the peppers. I placed them under the broiler for a few minutes at the end to crisp up the bacon. I was even able to flip them over without loosing any filling to crisp up the bacon on the bottom. I will use a wire rack to bake them next time so they don't sit in grease. Don't forget to wear gloves... I forgot and paid for it all evening. OUCH!

I made this over the weekend and it turned out great! I even flubbed up and forgot to cover it until 15 minutes into baking. The only changes I made were to butter the noodles and add about 1 tsp. Italian seasoning to the meat as it cooked

Soft Chocolate Cookies

Not bad at all...my daughters loved them! I thought the batter was more of the consistancy of brownie mix and it wasn't rollable in an hr...but I just dropped them on the cookie sheet and went. Baked 3 dozen with this recipe. I didn't dust with confectioners sugar since we just moved here and I havent found my sieve but they were yummy and cake-like...almost like an oreo cakester!

Blueberry Cream Muffins

The best blueberry muffin recipe! I have tried dozens of different blueberry recipes and this is definitely #1! My family, coworkers and neighbors loved them. These are a higher quality of muffin, more of what you might find at a fine baker's shop. I used frozen blueberries, it's all I had on hand, tossed them in with the dry ingredients, gave them a few stirs and they were just fine. They didn't fall to the bottom and there were loads of blueberries all the way through the muffin. I did use an extra cup of blueberries, I love them! If you want to make the best blueberry muffin recipe, look no further, this is the recipe.
