Cinnamon Rolls

I cut this recipe in half and it made the fluffiest, moist, delicious cinnamon rolls. I added more cinnamon, a little nutmeg, and about 1/4 cup of brown sugar (remember I only used half the recipe). I also added about 2 tblsp of melted butter to brush the tops before baking to keep them nice and soft. These came out perfect with very little fuss. And in my book that makes this a keeper recipe...plus my son LOVES them. Huge as they were-HE ATE TWO!!! We will definitely make again. Thanks for the great recipe.

Mom's Squash Casserole

This was a good blend of flavors, but just a little drier than I had expected. I might try adding a little milk to moisten just a bit before cooking. Overall, the casserole held up well and was easy to prepare. I did add a little garlic powder, but still seemed to be missing something. Still good. Thanks.

Yeast Pancakes

AWESOME!!!These have changed my way of cooking pancakes forever. I have to admit, I was very skeptical...but definitely pleasantly surprised. I set the batter on my oven warmer to rise and as previously suggested avoided the temptation to stir the batter after it rose. I cut the batter recipe in half and it still made 13 (6-inch) pancakes. They were delicious. I will have to keep yeast on hand, as these will definitely be a tradition in our house. THANKS!!!

Cinnamon Rolls I

These were "ok" to me, but probably not the best. Just maybe "happy-medium". They were just a little too gooey and hard (and I even reduced the cooking time). They didn't turn out quite as good as other recipes I've tried - even though they were really "pretty" when they were done. My son is a "cinnamon roll lover" and he wouldn't eat these. Based on that, I probably won't make again.

Granny Kat's Pumpkin Roll

So moist and creamy filling is the perfect touch. After I frosted and rolled, I wrapped in plastic wrap, then with aluminum foil as suggested. I placed in the freezer for about an hour, then sliced right before serving. Big hit! My husband even liked it, which is a big plus for this recipe. Will make again for sure. This is definitely on our Thanksgiving menu. I was very impressed with presentation...especially since this is my first attempt at a rolled dessert. Thanks!

Summer Squash Casserole with Nuts

Delicious! I took other's recommendations and decided I didn't want mushed squash. So I cut zucchini squash in 1/2 chunks (we had 2 lbs...so we doubled the recipe). I spread the zucchini, onion (we used green onion), and bell pepper in a lightly greased 9 X 13 glass pan. Then I put the nuts in my food processor until the consistency of cornmeal and mix with the butter, mayo, sugar, and eggs. I poured this over the top of the veggies. Took 3 pieces of stale toast and run them through the food processor until it looked like stuffing mixture and sprinkled over the top. Finally I took a 2 cup bag of cheddar cheese and topped it off. We increased the cooking time to 45 minutes. The aroma was sinful. The veggies weren't soggy and the flavor was delicious. My husband thought a little ground beef would make it a complete meal...so I might try next time. But I loved this! We ate half the casserole just between the two of us. Definitely will make again!!!

Mom's Good Cinnamon Rolls

These came out beautifully. I made a vanilla glaze to top them with and they were perfect with just enough sweetness for our family. We made a smaller batch (6 servings) and I used an 8 X 8 pan in our convection oven (which reduced the cooking time to 22 minutes). This was a simple recipe with great results. Thank you! We will use again.

Chinese Chicken Fried Rice I

We used frozen early peas, omitted the carrots & pepper, substituted green onion for the onion and brown rice instead of white rice. This was very yummy! The longest part was preparing the rice, but other than that this is a very quick, simple, and delicious meal. Excellent flavor. Will definitely make again. Thanks!

One Pot Tuna Casserole

This was great for super-quick meal. Makes tons of food (too much for our little family). But we will have leftovers to take in lunches tomorrow :-). I substituted with 12 oz. bag of "No Yolk" noodles, increased tuna to 2 cans and used 1/2 block of Velveeta Cheese cubed (2 lb. pkg.)instead of the cheddar cheese. I also increased the milk to 1 can after I emptied the mushroom soup. I seasoned with garlic salt, pepper, onion powder, and prepared dried mustard to taste. It had a beautifully creamy yummy taste! Great idea for a nice quick winter meal. Will make again. Thanks!!!

Easy Chicken Enchiladas

Followed the recipe to the "T". Very flavorful and easy. Only thing is the tortillas were a little tough. Will probably add can enchilada sauce next time as some suggested. Other than that was great recipe. Will make again.

Fruit Cocktail Cake VII

Terrific and Easy! Reminds me of mom's recipe except she used 1 tblsp baking powder and 1/4 tsp salt instead of baking soda. Gives it cake consistency. I also made an adjustment to the topping. On the topping I used 1/2 white granulated sugar and 1/2 cup powdered sugar for the sugar called for. Also note: use unsalted stick butter and unsweetened coconut. Bring your mixture to rapid boil for at least 1 minute. Stir in vanilla after you remove from heat. This will make the topping set up beautifully. Great recipe, will use again. Thanks for the memories :-)

Easy Pancakes

Very quick, simple, and make beautiful pancakes. Took the advice of others and lessened the salt to just a pinch. Also added about 1/4 cup of milk to thin batter just a bit. But other than that made simple and delicious pancakes. May never use the box again:-). Thanks for recipe.

Hot Artichoke and Spinach Dip II

Awesome! We kind of did a flipflop on the artichokes and spinach (used 6 oz. jar of artichoke hearts and 16 oz. bag of frozen chopped spinach, thawed and drained). We are just more a spinach family :-). But the flavor was outrageously delicious. This was gone in minutes. Definitely a repeat to try at our next get-together. Thanks for the recipe!

Cranberry Muffins

Ok,found a way to use my leftover cranberry sauce :-) Instead of fresh cranberries, I use a 16 ounce can of Ocean Spray Whole Cranberry sauce and increased the baking powder to 3 tsp. and added 1 tsp. orange zest. Very moist and tangy...even my husband liked them. These were especially good warm with butter. Good recipe, and since I am the only one in our house that likes cranberry sauce...will definitely use again for leftovers.

Glazed Ham

I wish I could give this more stars! This is the absolute best way to cook a ham ever. The first time I made it was Christmas dinner and I was pressed for time (increased cooking temperature to 350 degrees for 4 hours) and it was still very good. But making it today for New Years Eve celebration and cooked overnight. WOW! I have never deboned a ham so easily. This will be a family tradition at our house. Thanks for the recipe.

Favorite Peanut Butter Cookies

These were a big hit with my son. He must have eaten a dozen right out of the oven and my husband loved them too. I did alter the recipe a bit. I used real butter instead of margarine and added 1/4 cup flour. Then I cut the cooking temperature back to 350 degrees and cooked the cookies about 8-10 minutes. I used cooling racks lined with wax paper. They turned out perfect. Will use this again.

Pumpkin Cookies III

These are awesome cookies! They are soft and stay that way the next day. They are like little slices of pumpkin bread. The only things I did different is first I used pumpkin pie spice and then I heated up a can of cream cheese frosting for like 30 seconds and drizzled it over the cookies. Then I put a whole pecan on top. They were pretty and delicious. I made them the first time this last weekend and now my hubby wants me to make them for his shop for their Thanksgiving lunch. I am off to make them again, now!

Hearty Beef Stew

This was so easy to make! I threw everthing in the crock pot just before bed, and in the morning it was ready to pack for my lunch. I thawed out some Rhodes yeast rolls overnight and baked them while I was getting ready for work in the morning. Perfect meal for a fall day!
