Oklahoma Brisket

Reviewed: Sep. 2, 2008
I have never attempted brisket before, but was wanting something different for our Labor Day "get-together". This WON everyone over. I made it exactly as specified and it came out perfect. The secret to the barbeque sauce is to slow-simmer the sauce to blend the flavors. It came out perfect - no vinegary taste - just a nice tangy barbeque sauce and a perfect compliment to the brisket. This Kansas gal will be cooking up Oklahoma brisket more often. Thanks for a simply fabulous recipe. Also be sure to use a freshly sharpened knife and cut against the grain of the meat. It will melt into each slice for a beautiful presentation! Thanks for a great recipe!

Artichoke and Chickpea Stew

Reviewed: Aug. 26, 2008
This was wonderfully flavorful! Who would have known artichokes would be so good in stew. I did make a few minor adjustments. I used frozen artichoke hearts (thawed and chopped) and 4 rounded teaspoons of instant boullian with 2 cups of water instead of the chicken broth. I also used fresh garden tomatoes and added some fresh chopped cilantro. It was a wonderful way to pick up my wet rainy day! Thanks for the recipe. I will definitely make again.

Best Bread Machine Bread

Reviewed: Aug. 25, 2008
We tried this yesterday. It came out a bit funky looking (top was "swirly" and uneven) but it tasted ever so good! This is a very good basic recipe and I will add this to my bread rotation. Thank you!

Tantalizing Turkey and Blue Cheese Meatballs

Reviewed: Aug. 20, 2008
I made this recipe almost exactly as written (I used half the black pepper called for). Unfortunately the meat mixture was too wet to form into meat balls. An additional 1/2 cup of bread crumbs did the trick. I really enjoyed this recipe. The ingredients were subtle and complemented each other well. I served the meatballs with a balsamic reduction along with sides of wilted spinach and pasta with homemade pesto sauce. YUM! On a sorry note, my husband and children are traditionalists and prefer the same old turkey meatballs I usually make (not your fault). They gave you between 1 and 3 stars. However, I gave you 5! Since my vote counts more (after all, I searched for recipe, made recipe, prepared appropriate accompaniments and took the time to review said recipe), I gave you an average 4 star rating. You did a great job and should be proud of this recipe. I am impressed that this was submitted by a 15 year old. I look forward to great things from you!

Ricardo's Pizza Crust

Reviewed: Aug. 10, 2008
I'm sorry Ricardo, but as written this is not what I was expecting. 1st of all TOO MUCH SUGAR! Way too sweet...does not go with the savory flavors of the added garlic and herbs. Secondly, NOT ENOUGH FLOUR! We spent a good 15 minutes trying to get the sticky dough out of the bread machine pan. It did puff up quite a bit during baking so my advice is to roll thinLy unless you like a lot of dough with your pizza. I wouldn't mind trying this again with a fraction of the sugar and another cup or 2 of flour. EDIT: I read over the other reviews and am now questioning that maybe I did something wrong in the crust making process. That and the kids enjoyed their pizza. Okay...one more star. I guess maybe it was a personal taste thing. Still think it was way too sweet though.

Cumin Lamb Steaks with Smashed Potatoes, Wilted Spinach and Red Wine Sauce

Reviewed: Aug. 7, 2008
Disclaimer: I made the lamb only, not the spinach or potatoes so my review is focused on only the lamb. Very interesting combination of flavors. I never would have thought of cumin and a red wine reduction going together but in this circumstance it really works. The lamb was quite flavorful and my daughter (the other lamb lover in the family) enjoyed this dish as much, if not more, than I. I did feel the need to add a little kosher salt to the wine sauce because I felt it was just a touch too sweet. Otherwise, no modifications. Thanks for submitting a unique and flavorful recipe.

Stuffed Zucchini I

Reviewed: Aug. 5, 2008
These were just okay for me but daughter and husband enjoyed them. They definitely need additional seasoning, though (I ended up adding some garlic and basil) They were quite filling, however, and made a pretty presentation. With some tweaking they would make a good holiday dish. On a side note, I don't know why but these had a "pumpkiny" undertone to it.

Jay's Signature Pizza Crust

Reviewed: Jul. 31, 2008
Your crust was wonderful for grilled pizza. It was very simple to make (using a bread machine) and I was able to to stretch the recipe into 7 individual pizza crusts, thin and crispy style. As I rolled out the individual crusts, instead of a floured surface I used cornmeal instead. Other than that recipe was followed exactly.

Okra, Corn and Tomatoes

Reviewed: Jul. 29, 2008
This was really good. I did make some changes because I didn't have the file powder. So instead I substituted ground cummin and also used a little cilantro. I also used about 3 tblsp of olive oil to cook the okra and onions, then poured in a pouch of real bacon bits. I used fresh okra and cherry tomatoes from our garden with two nice spicey chopped jalepeno peppers. And just poured in a can of whole kernel corn (drained). The flavors were wonderful together and gave it just the right amount of "bite" that my family enjoys. We served it hot over cornbread. A definite hit for my family. Will be making this again. Thanks for the recipe :-)

Panzanella Salad

Reviewed: Jun. 23, 2008
I'm truly sorry but this salad was just okay. I really, really wanted to like it as it is currently the big hit on the "exchange" but I must be honest. I made exactly as written and ended up with mush. What did I do wrong? Maybe I'll try again and do it this way: Toss vinegrette with everything except the bread. Gently toss bread into salad JUST PRIOR to serving.

Southern Fried Cabbage

Reviewed: May 27, 2008
Wonderful recipe! So simple, so quick, so tasty!!! The only alterations I made were I used 2 tblsp of virgin olive oil to cook the cabbage and onions in. Once they were tender and almost ready to serve I used real bacon bits and sprinkled over the top, then tossed in to warm throughout. Perfect! (And no having to deal with any bacon grease). I served this with some good old canjun red beans and southern cornbread! My husband thought he'd died and gone to "redneck heaven"! Sure was good! Thanks for the great recipe!

Good Old Fashioned Pancakes

Reviewed: May 26, 2008
These were the BOMB!!! OMG! The only modification I made was to add just a little water to loosen the batter and a splash of vanilla. My 6 year old ate them so fast! These are the fluffiest, lightest pancakes ever. I thought the heaviness of the batter would make them so dense, but what a pleasant surprise! Thank you! We will definitely add this to our family's favorites!
