Fruity Curry Chicken Salad

Great Chicken Salad, I skipped the curry and apple though, and instead of rasisins I used dried cherries, I served it with pilsbury cresent rolls, and my boyfriend loved it. A+

Gazpacho Pasta Salad

I love gazpacho and really wanted to love this salad, but just couldn't do it. After making as directed, I still thought the dressing lacked something-so I added more lime juice (probably doubled the orginal amount when all was said and done) but it still was just an okay salad. I'll probably keep working with this recipe to make it more like I would enjoy, but not sure it will be any time soon.

Southwestern Pasta Salad

Took this and 4 other salads to my niece's briadal shower and this was the big No Seller. Not sure why, but no one seemed to like this salad. I thought the taste was okay, but I will admit as we were cleaning up it was the one bowl I tossed rather than saved to bring home. I stink at modifying recipes, but am thinking possibly a smarter cook would know how to tweak the dressing which was heavy on seasoning, but low on flavor - meaning I could taste all of the seasonings and spices in there, just don't know that they tasted good in there!

Absolutely Fabulous Greek/House Dressing

Because I was only making this for a small bridal shower, I cut the serving size down to 12. Doing so, I can tell you this is a very delicious salad dressing. The only thing I did wrong, was to not havew enough greens in my salad-made it a little too soggy, but that was totally my fault. Good dressing that is easy to pull together.

California Roll Salad

There is a good concept in this salad-just not as written (for me anyway). Maybe I'm just not a fan of rice-based salads, or maybe there was too much rice and not enough salad; but for some reason the rice just overpowered the salad. The dressing is delicious, and I would double next time so I had some to pour on before and during serving. Will try again, but am feeling the need to tinker with this a bit to make it something I'll love eating.

Cheese Soup with Broccoli

I have a similar recipe from my Grandma that's one of my favorites, but decided to give this one a try to see if it was better. It was quite tasty, and cooking the veggies in the broth gave it great flavor. I added potatoes, and it needs WAY more than 1 cup of brocolli, but was overall quite good. If you are worried about the cheese curdling, melt it into your flour/milk mixture after it thickens and you have taken if off the heat - then just add to the soup!

Cherry Swirl Coffee Cake

Technically, I don't KNOW if it's a five-star recipe - I took it to a church breakfast and didn't get any. However, it looked and smelled fabulous, was terribly easy and quick to make, and I came home with an empty pan and a ton of compliments. So I assume it's quite tasty!

BREAKSTONE'S Noodle Kugel

I made this for for the second night of Hanukkah. My father-in-law, who is old fashioned loved it. I did jazz it up a bit. I added 2 personal containers of applesauce, 3 teaspoons of cinnamon, and a das or 2 of nutmeg. To compensate of the added liquid I cutback on the cottage cheese. To make it irressitable I stirred in a couple of handfuls of rasins. This made it more palitable to the nontaditional crowd and gave the older generation a new look at an old favorite.

Chicken Piccata II

Made this last night - just as described except I used boneless, skinless thighs instead of breast. My son and I both loved it, the lemon was perfectly subtle. Served with a red wine risotto and boiled baby carrots. Wine suggestion: Australian or German Reisling

Janet's Rich Banana Bread

This just became my new standby banana bread recipe! So moist with great banana flavor. I could see how it would be on the sweet side for some and perhaps all the sugar explains why it browns so quickly and dark on the top. I tented mine with foil with about 10 minutes to go and will do it sooner next time. I also will cut back the bake time because I like my bread just a little underdone and sticky inside. I used three bananas instead of two and I didn't add the walnuts.

Chocolate Trifle

This was DIVINE. I took a couple suggestions on this. I subbed the 8 oz. of whipped cream for the handmade stuff, whisking heavy cream, 2 Tbsp sugar and a tad of mexican vanilla together. This gave the chocolate pudding wonderful flavor. I also left out about 1/4 cup of the water and used irish cream liquer in its place and sprinkled heath bits over the brownies when I layered everything up. EXCELLENT substitutions if you want more depth to your already decadent dish and very pretty!!

West African Peanut Soup

This is absolutely delicious! I subbed in quinoa for the rice because I wanted to use some I had on hand. Otherwise, I was faithful to the recipe. My husband, who is the second pickiest eater in the world, loved it. In fact, he said it is extremely similar to the sauce used in the "peanut butter chicken" from his favorite Chinese restaurant in Omaha, so after years of searching, I have stumbled across a good recipe for it!

Banana Banana Bread

I just tried this recipe yesterday when I was looking for a new variety. JACKPOT!!! I am already having to make more. Moist, great balance of flavors...not too strong. Comes out a little darker than I am used to, but it was absolutely awesome in flavor. Even hubby, who is always saying that any banana bread is too dry loved this and asked where the rest was.

Beefy Cheesy Pasta

Easy, yummy and a hit with both hubby and my picky 8 yr old. My 7 year turned her nose up but she does on most ground beef dishes! More for us though, right? LOL! I only had 4 slices of American cheese but it was still yummy! I added a little more soy sauce because I used more noodles and 1 lb of ground beef but the flavors meshed together well and this will make awesome leftovers this week! Thanks so much!
