Vegan Fajitas

Added a little garlic to the marinade and it was pretty good, though I might use less vinegar next time. I also used mushrooms and omitted the black beans and corn. If you're not vegan, a little sour cream and cheese sets these off perfectly!

My dough was too moist and I had to add at least half a cup of flour to make them roll-able. I will try the recipe again and see what happens.

Mexican Chicken I

Amazing! My boyfriend and I tried this about 2 months ago and I make it probably once every two weeks. I tweaked it because I don't usually have black beans so we use corn instead. Over rice with some shredded cheese and sour creams it's amazing!
