Vegetarian Cottage Cheese Patties

I halved the recipe and skipped the cream of mushroom and ate it with ketchup and a side of spicy fries. i realized that i don't like the taste of thyme, but im not going to nitpick. i added a handful of shreaded cheese and i used beefy onion soup instead of original onion soup, because i was cooking for myself, and im not a vegetarian. i have lots of leftover, but i don't know if i'll use it because of the thyme, i'd rather start from scratch and omit it. My roommate is too picky to even try it, but i liked it very well.

Cherry Pie IV

This was my first attempt at cherry pie. I used 5 cans tart pie cherries (well drained), which turned out to be just enough. The almond extract made ALL the difference in the filling (which is DELICIOUS)--don't skip it! The only problem I had with the filling was my cherries didn't hold together, but that's probably because I used canned ones that were already very mushy. If you're going to do a lattice crust, let the filling cool first! I didn't, and was left trying to weave melting, stretching strips of dough with very little success.

Bake Sale Lemon Bars

With corrections, this recipe is fantastic. Definitely the best lemon bars I've ever tasted, and my entire family agrees. I didn't have time to cool them all the way before serving, and they were even more amazing served a little warm! FYI: I doubled the crust, and used 1 cup lemon juice and 2 cups white sugar in the filling.

Ratatouille Pasta

I made this tonight and it was great. I did substitute yellow squash for zucchini and left out the tomatoe paste because I did not want to open a can for such a small amount. I left the onions out as well using onion powder (too many small children eating it)

Homemade Black Bean Veggie Burgers

Very tasty! Didn't have enough chili powder and no hot sauce, so I used ground red pepper. Made a double batch with half bread crumbs and half oatmeal, as suggested. Formed the pattys and froze about 15 min before baking. Froze the left over cooked pattys and reheated for taco salad. Delicious.

Very Berry Blueberry Muffins

The BEST blueberry muffin I have ever tasted! I gave it 4 stars because I did alter a couple things. I used melted Smart Balance Omega 3 marg., added an extra 1/2 tsp vanilla, used a whole 1# bag of blueberries, and added a handful of pecans. This is my new go to muffin recipe! Can't wait to try with cranberries and walnuts and cherries and almonds!

Risotto with Asparagus

This was delicious and far easier than I imagined "risotto" would be for a first attempt. I added some fresh mushrooms with the onions and minced garlic right before the wine. I didn't pay attention to the quantity when following the recipe so my husband and I had plenty for leftovers the next couple days and it was just as good as the first day! Next time I have to cut the recipe down to serve 2.

Mexican Lasagna II

I gave it four stars as is but after our changes it was a 5 star recipe. We used three kids of beans, refried, black and pinto and also added olives. We tripled it and froze two pans of it. It reheated well after being frozen for a month.

Ground Beef Stroganoff

I sought out this recipe to replace my old one that used Cream of Mushroom soup since Cream of mushroom soups usually has MSG in it (Campbells does) So I needed a recipe that did not have the soup in it. This was very good. We had a bunch of left over pasta though I will not fix as much noodles next time.

This was HOT!!! I cut up the peppers before adding the sour cream and this may have been my problem. This was really to hot to eat. The flavor was nice. I will try again without cutting the peppers and we will see how it goes. Thank you anyway!

Irish Cream Truffle Fudge

Delicious!! This fudge got rave reviews from my entire family. It was a bit crumbly at first--I recommend letting it warm to room temperature before slicing. Consistency and flavor are even better today than they were 4 days ago. I highly recommend this recipe!

San Francisco Sourdough Bread

It was a great bread but did not seem very "sourdoughy" I don't know whether to blame the bread or the starter which I got off this site and made up two days ago like it said. I used the "Sourdough Starter II" off this site. It did make two large loaves. Mine fell some because I let them rise too long. Less then an hour for the second rise would have been good unlike the full hour like I did.

Cream of Chicken with Wild Rice Soup

My husband and I loved this. We made it with the San Francisco Sourdough Bread on this site. Its creamy and hearty. We did mince some carrot to give it some color but other then that followed the recipe exactly. We will be making again. My husband wants to take it to a potluck in a couple weeks at his work.

Candy Surprise Peanut Butter Cookies (Cookie Mix)

This is a simple recipe that's easy to do. My kids loved helping me with it. I varied the recipe by doubling the mix, oil, egg, and used bite-sized snickers. I made the dough balls bigger like fat golfballs, which makes big cookies. The trick was to center the snickers in the middle of the doughballs. When they came out of the oven and were hot, I dropped the cookie sheet a few times on the counter to flatten them and make them more moist. Me and my son think they are great without the frosting.
