Hamburger Spanish Rice

We really like this! One thing I've found is that I have to decrease the amount of salt to 1/2 teaspoon because otherwise it is SO salty!

Garlic Lover's Chicken

I have the original Quick Cooking magazine that this recipe appeared in, and it actually says "1-2 garlic cloves". I used 2 and it was quite garlic-y! I could smell the garlic from outside the kitchen door! The whole family enjoyed it. :)

Breaded Ranch Chicken

This is SO good! The first time I made it, I had to make it again within a couple of days! I've also tried it with Italian dressing mix and another time with taco seasoning. Both were also really good!

Cookies 'n' Cream Fudge

I also had problems with it setting up. It was more like spoon fudge. I used the cheaper hydrox cookies rather than Oreos. Maybe that had something to do with it..

Wonderful scones! I did just the plain flavor the first time so I could see how they were as is! I did have to add a tad bit extra flour, and I subbed turbinado sugar for the white sugar, and also subbed 1 cup of the flour for wheat flour. Thanks for the recipe!

Cooky Cookies

Awesome cookies! I reduced coconut to 1/2 cup, added 1/2 cup heath toffee chips, added 3/4 cup semisweet chips (will add more next time), and finally substituted chopped pecans, because that is what I had. These are great cookies!

Vegetarian Tortilla Soup

This is awesome tortilla soup! I followed the recipe exactly except I added 2 Quorn meatless chicken cutlets diced up to the soup! Also might try with black beans sometime. If it is too hot--you probably used jalapeno peppers instead of green chiles, because as is, this soup is NOT spicy, IMO! If you think its bland, then add a little hot sauce or salsa to your serving. We thought it was absolutely perfect--I wouldn't change a thing! Thanks for the recipe!!!

Peanut Butter, Mayonnaise, and Lettuce Sandwich

I nearly fainted when I saw this - not because I thought it sounded bad, but because I grew up eating peanut butter sandwiches nearly the same way!!! Not with mayo, but with Miracle Whip (hurray for the other reviewer who thinks it's great, too!). And - I kid you not - until I was a grown woman, I thought that this was how peanut butter sandwiches were made. My husband thinks I'm totally off my nut and refuses to try it, but our three kids love it! Three cheers for peanut butter and Miracle Whip!!!

Gramma's Apple Bread Pudding

This was on of the best bread pudding recipies I have made. The apples really add a lot. I added 1 more egg and increased the vanilla to 1 tsp. Just personal reference. We like it a little moist and love vanilla.

Bacon Chicken and Dumplings

My main concern is that the recipe states that cooking time is 30 min. With simmering twice at 15 min each, then cooking the dumplings covered and uncovered at 10 min each, that's a total of 50 minutes even with everything pre-prepped (including bacon cooked and crumbled). I'd say give it a good hour. As for taste, it was ok - just needs to be tweeked a bit! I reduced the amount of half and half to 2 cups, as others suggested, and also added a bit of cornstarch. I used Jiffy biscuit mix and there were no directions for dumplings on the box, so I started out with a 1/2 cup milk, but had to add more. I still don't think I got it right, as the dumplings never completely cooked thru on top (I ended up turning them over to finish cooking). I would definitely add more bacon, and maybe some carrots and peas for color. The dumplings need something as well...maybe some garlic powder or basil or whatever you would like to flavor your dumplings with! By themselves I thought they were too bland. I will most likely be making this again - just a little differently! :) Thanks!!

Eggnog Fudge

I cut the recipe in half and omitted the cinnamon (I've never had it in eggnog, so I figured it made sense to leave it out of eggnog fudge) and the almonds. I followed the recipe, and even turned down the heat when it started to boil - but allowed it to keep boiling. It still turned out rather hard. Not need-to-use-a-hammer hard, but not the smooth, creamy consistancy that I look for in fudge. As for the taste, it was good. Tasted like eggnog and VERY sweet.

Garlic and Onion Burgers

Butterscotch Brownies I

I baked for the minimum amount of time, and I didn't have any problem with the sugar carmelizing. They turned out nice and chewy. I loathe walnuts, so I replaced it with another 1/4 cup flour. These brownies aren't overly sweet, so if you're looking for more flavor, I bet throwing in a few butterscotch chips would perk these up! Good recipe overall!
