Sweet and Sour Meatloaf

This is pretty good. I use cider vinegar instead of regular vinegar. I once made the mistake of trying to blend together the remaining meatloaf ingredients while the hamburger was defrosting in the microwave. Didn't turn out too well!

Cinnamon Nut Coffee Cake

This is really good. I leave out the nuts and I've never had a problem with it being too dry. Keep in mind that it calls for a 12x8-inch pan. If you're using a 13x9 that could be why it's turning out dry.

White Chocolate Orange Cookies

These went over really well at my club meeting and then at my husband's work (although one of my husband's co-workers said they were just awful - after the 5th one he started to feel sick! ha ha!!!). I omitted the walnuts (don't like nuts in cookies) and I substituted orange extract for the peel/zest. They were a nice change and not dry at all. :) I only gave them 4 stars instead of 5 because I have had problems with them crumbling. Anyone else have this problem?

Crowned Beef Bake

This was pretty good! I left out the celery seed, since I don't care for it. I also added a little instant minced onion to the hamburger when browning. I would recommend using a "bigger" 2-qt. dish. I used an 8x8 and didn't have enough room for all the biscuits. Plus, there was way too much sauce to cover all the biscuits, so I ended up pouring the rest in the middle. Still turned out ok. I didn't have any problem with my biscuits not cooking through.

I've made these several times. It's a good basic and easy recipe, but I will agree that it is rather bland as is. Throw in some seasoning of your choice and see what happens! :)

Pancake Stack with Syrup

These are outstanding! They turn out nice and fluffy! I once suggested to a good friend that she make pancakes for dinner (since they were quick and easy), but when she said she didn't have any mix, I said "you don't need mix!" and gave her this recipe. Now she says her son's favorite thing is homemade pancakes. One thing I added is a little vanilla - enhances the flavor. I've only made they syrup once, but that was pretty good, too!

Parmesan Corn Chowder

This is one of our favorites! I had never made chowder before, but the Parmesan sounded interesting. I either reduce the amount of celery by half or leave it out all together. I also add cooked bacon pieces, since my husband is a bacon freak and it really adds to the flavor! I've made this a couple of times to take to new moms and have gotten lots of compliments.
