Italian Dressing Mix

I had problems with this recipe, but I was able to make it work for me. First, it is too salty. Use garlic powder instead of garlic salt and cut the salt way back (1 tsp. or less). Second, I had problems with both the dry and liquid ingredients separating. It's hard to combine the flakes with the granules. The liquid ingredients wouldn't stay mixed together, so I used an emulsifier that I read about a couple of months ago in Cooks Illustrated. I came up with this combination: 1 Tbsp. vinegar, 1/2 tsp. each dijon and mayo (the emulsifiers), 1 tsp. flakes from the mix, 1/2 tsp. granules from the mix, slowly drizzle in 3 Tbsp. olive oil while whisking. This worked brilliantly and the dressing stayed uniform!

Angel Hair Pasta with Shrimp and Basil

Very good! I didn't have fresh basil, so I used 1 Tbsp. dried. I realized that I bought 14.5 oz. cans of tomatoes, instead of 28 oz., but it stilled turned out great. Just enough tomatoes without overpowering the shrimp.

Ghirardelli® Peppermint Brownies

Very yummy! These brownies are easy, delectable and pretty! The brownies are very fudgy, so don't overbake them like I did. The recipe said to bake them until a tester comes out clean. Well, I ended up baking them an extra 8 minutes and the toothpick still wasn't clean. I took them out anyways and after they cooled I realized that I had overbaked them. So my recommendation is to bake them for 45 minutes and just take them out, don't test them. The only other problem was that the "frosting" separated where the mint layer was, so be sure to get the melted chocolate layers all mixed together when spreading. Otherwise, these are rich and delicious! A great addition to your holiday cookie tray!

Banana Banana Bread

Hmmmm..... I hate to say it, but this is just too banana-y for our tastes. To get the 2 1/3 cups bananas, I used 6 bananas. I added 1 tsp. of cinnamon, which we couldn't taste because of the overwhelming banana. I ended up baking my loaf for 70 minutes, which was just perfect. It's not a bad banana bread (I like that it is very moist and dense), there are just other breads that I like much better, like the Banana Sour Cream Bread on this site.

Basil Pork Chops

These were good. I paired them with caramelized onions and some mashed potatoes. For me, the brown sugar overwhelmed the flavors of the basil and chili powder.

Easy OREO Truffles

These were good, but not great. My boyfriend and I couldn't put our finger on what was off, but it might be the semi sweet chocolate. If I make them again, I might use milk chocolate instead.

Crispy Rosemary Chicken and Fries

I used 4 chicken leg quarters, about medium 6 red potatoes (cut into 8ths) and all dried herbs. I mixed the dried herbs in with the olive oil and tossed everything together in the baking dish, then topped with extra salt and pepper. This dish was a breeze to throw together and the chicken was fantastic, but the potatoes were not quite crispy - next time I will drain the oil from the baking dish before the cook time is up as others have suggested.

Sweet Potato Rolls

These rolls were fluffy but filling. The sweet potato didn't add an overpowering flavor, which we liked. I am a novice bread maker, so I was afraid to add too much extra flour to the dough and, as a result, shaping my rolls was very difficult and they did not look very pretty in the end. Next time I will not be so timid with the extra flour!

Hearty Turkey Stew with Vegetables

This stew is good. I used leftover Rosemary Roasted Turkey from thanksgiving. I added an extra cup of chicken stock and used a red bell pepper instead of green. I agree that it is missing something, so I added 1 tsp. poultry seasoning, and that helped. I would recommend even more seasoning - just add what you like!

Potato Rosemary Rolls

These are absolutely gorgeous - both in looks and flavor! The only change I made was to use 2 Tbsp. fresh chopped rosemary. They came out perfect! I think I like these better than Jo's Rosemary Bread from this site. To make the shape of them, I coiled them around my finger, removed my finger, then put the outside end through the hole. Easy! I can't wait to make these for company.

Awesome Turkey Giblet Stock

It smells like Thanksgiving in here! This stock was so good and easy, a great way to use those giblets! I used this recipe to make the "Savory Turkey Gravy" recipe from this site, so I did eliminate the tangerine zest because I wasn't sure I wanted citrusy gravy.

Rosemary Roasted Turkey

Amazing! I made the turkey according to the recipe, although I did add a foil tent for the first 2 hours and then removed it the last hour so the skin browned nicely. Excellent flavor from the rosemary and herbs! This was only the second turkey I've ever made and it turned out great using this recipe. It was very easy separating the skin from the breast - so don't worry about that part! I highly recommend this recipe!

Savory Turkey Gravy

This was my first attempt at making gravy and it was a hit! I love the seasoning, the poultry season and celery salt are perfect. For the turkey stock, I used the "Awesome Turkey Giblet Stock" recipe from this site, but eliminated the tangerine zest. I only got about 2 cups stock, so I adjusted the other ingredients accordingly. Be sure to wisk WELL while SLOWLY adding in the water/flour mixture, otherwise you will get lumps!

Traditional Mashed Potatoes

Great basic recipe. Fluffy, tasty and perfect for gravy with Thanksgiving dinner! I used 1 tsp. kosher salt in the water while cooking the potatoes and 1 tsp. kosher salt mixed in at the end with the butter and milk.

Rice Stuffing with Apples, Herbs, and Bacon

I love this stuffing! This is the second time I've made this and it turned out awesome. Make sure to use a large stock pot to cook the wild rice in, because you end up adding a lot more to the pot later on. For the herbs I used 1 Tbsp. rosemary, 2 Tbsp. basil, 1 Tbsp. oregano, 1 Tbsp. thyme, 1/2 Tbsp. marjoram and 1/2 tsp. ground sage. I also added 1/2 tsp. salt and 1/2 tsp. pepper. The great thing is you can adjust the herbs according to your tastes. To cut costs, I only used raisins and craisins (skipping the apricots and cherries). It still turned out fabulous!

Caramel Crunch Apple Pie

I love caramel apple pie and the flavor of this one can't be beat. I did have trouble with the filling being very runny though. I halved the amount of evap. milk with the caramels and I added 1 Tbsp. corn starch in addition to the flour, hoping it would help. Not so much. I did solve my problem of having a soggy crust bottom by brushing with with egg whites and pre-baking for 5 minutes. Very tasty pie though, and I love the crunchy topping!

Oatmeal Raisin Cookies I
