Indonesian Satay

I only did the marinade portion of this recipe...and it was absolutely wonderful! I marinated the chicken for several hours and skewered it just before grilling. Not a drop left! I do think I will up the spice next time as we like our satay pretty perky, but it is great as is.

Peanut Sauce I

I really liked this, however, my stepdaughter would not even touch it and my husband found it too vinegary. Perhaps I will try again and take a note from other reviewers and reduce the vinegar.

Smothered Green Beans

We thought this was great. As other reviewers suggested, I first steamed the beans for about 5 minutes. I also used chicken broth instead of water, and threw in some red pepper flakes. These were delicious!!!

Byrdhouse Marinated Tomatoes and Mushrooms

This recipe was wonderful! I was worried, because I'm not crazy about mushrooms in general, but they were delicious in this recipe. I ate it both plain and also served finely chopped over cheesy homemade focaccia bread, which I loved as well. I actually ate it for a few days in a row and didn't notice the tomatoes getting very soggy as another reviewer did, but my tomatoes were fresh from the farmers market.

Lemon-Butter Snow Peas

I've made this several times now, and I think it's great! Such an easy, tasty way to prepare one of my favorite veggies. I've cooked it for a group, and a couple of people said it was too "lemony", which is why I only gave it 4 stars.

Fried Rice with Chicken

I just made this tonight for my boyfriend and I, and we loved it! I only used 1 slice of bacon so I added a little bit of oil before I scrambled the egg. In the name of sneaking in more veggies, I also added green onion, mushrooms, and chopped fresh snow peas plus plenty of cayenne pepper. It was delicious! Better even than the our favorite Chinese buffet, and there's even enough left for me to take to lunch tomorrow!

Oatmeal Waffles

Great texture, excellent, healthy recipe! Kids and I loved them. I just topped with honey. Also added pumpkin pie spice and a couple tsps. of vanilla to batter. Make sure to cook close to Max. heat, otherwise mine were sticking. Made about 6-7 large round waffles (with 4 quarters). I love to freeze and pop in the toaster later.

Lemon Cake with Lemon Filling and Lemon Butter Frosting

Every part of this recipe is extraordinary. I wouldn't change anything, and that is a rare comment from me. Lemon, lemon, lemon. YUM. The cake also tastes even better after a day of refrigeration.

Zucchini Bisque

Very quick, easy, nutritious, healthful, delicious. Makes a good 1st course or for a meal, serve with salad and bread. I used an immersion blender right in the pot to puree (so much easier than a blender!). I used 2% milk instead of cream. I doubled recipe and used 5 medium-large zucchini to equal 5 cups. I added a little garlic powder/granules. Would be good with fresh croutons sprinkled on top. Almost tastes like cream of broccoli soup. My 3 y.o. daughter loved it. I wondered if it's necessary to shred the zucchini since you'll be pureeing it; next time I'll just cube.

The Best Rolled Sugar Cookies

It's title says it all! I have made many a rolled sugar cookie in my day, and this is by far the easiest to work with and the best-tasting. I'm not sure why everyone thinks it isn't sweet enough; I think it tastes so great I prefer it without frosting! My only addition is the one thing I always add to rolled sugar cookies: almond extract. Half to equal the amount of vanilla. I also leave out the salt from all sweet recipes, but that's just me.

Adrienne's Cucumber Salad

Exactly what I was looking for. Just like what my grandma used to make. Never had dill in it before, and that's a great addition. I heated vinegar/sugar in microwave and poured over cucumbers, let sit overnight in fridge and just had some: flavor is perfect, veggies are crunchy, vinegar took heat out of onion. I used red onion, 2 cukes, 1 1/4 cup vinegar, 1 cup sugar, salted cukes, omitted water since cukes will put off a lot of water. Yum--I eat this by the bowlful.

Strawberry Bread I

This is almost identical to a recipe I make and love, so I will post my differences here: 1TBS of cinn instead of tsp, 1c of oil instead of 1 1/4, and 2 packages of strawberries instead of 1. Definitely put in two pans! I don't thaw the berries, then I chop them while frozen, then coat them in a spoonful of flour (removed from the recipe, not extra). This way they remain buoyant. Also, a healthy version is as such: 1c sugar, 2 eggs/2 egg whites, and replace half oil with applesauce.
