Mocha Chocolate Chip Banana Muffins

I love them! I used 3 tbsp coffee in 2 tbsp water. I also used 1/2 cup oil instead of 1 cup margarine. I used Hershey's dark chocolate chips. They came out super moist and irresistable!

Italian Sausage Tortellini Soup

This was great! I sauteed the green pepper in with the onion and garlic. Then I deglazed the pan with the wine and then added the rest of the wet ingredients. I used half beef stock and chicken stock and 1 14oz can of petite diced tomatoes in garlic and olive oil. I didn't have totellini so I used mini cheese raviollis. I didn't use carotts or zuchini. Great on a cold Iowa winter day.

Oatmeal Cranberry White Chocolate Chunk Cookies

Oh my goodness they are great. I accidentally screwed up the butter proportion, so I ended up using 1 cup butter, 1 cup brown sugar, 2 eggs, and just a tad bit more of the oats, flour and baking soda. I also added about 2 tsp vanilla and 2 tbsp white sugar. Now I like my cookies sweet, and these were. Just how I like 'em!

Slow Cooker Chicken Stroganoff

This is very very good! I put the chicken soup in at the beginning along with frozen chicken breast and butter. I only used half of the seasoning packet and 4 oz low fat cream cheese with about 1/4 cup low fat sour cream. Served over egg noodles!

Walnut Raisin Scones

I have made these dozens of times. I tried 4 different scone recipes, each with a different base (sour cream, whipping cream, buttermilk, etc). These buttermilk-base scones definitely turned out the best in flavor, and consistency. I personally like a little more sugar in mine, so I put in about 1/4 a cup of sugar. I also like to brush the tops with a bit more buttermilk and sprinkle sugar. I have done all sorts of scones with this as a base recipe--fresh strawberry, chocolate chip, dried cranberry, dried blueberry, dried cherry....I like the dried fruit ones the best! I usually soak the dried fruit in some water in the microwave for about 20 seconds, then drain the excess and pop them in the batter. Definitely try this recipe if you're looking for a good scone.

Mrs. Sigg's Fresh Pumpkin Pie

I found out that you want to fill your pie as full as possible, so up to the brim, people! It does puff up slightly, but will shrink back down after cooling. I did pre-bake my crusts for about 10 minutes before adding the filling, and I was very pleased with how it turned out!

Green Bean Casserole I

Exactly what I wanted--traditional and tasty! No reason to mess around and add other ingredients when it's already great the way it's written. I doubled the recipe, and only used 1 cup of milk. It turned out creamy; not too think and not too runny.

Sooooo good! As another reviewer suggested, I cooked the pasta seperately. I used 14.5 oz petite dice tomatoes, 8 oz tomatoe sauce, no stewed tomatoes or paste. Spices were the same plus salt and pepper. This will be added to my rotation!

Super-Delicious Zuppa Toscana

FABULOUS!!! i have looked for a while for an at home version of my favorite "italian restaurant" soup and now i have it! i also used hot sausage, patted the excess fat off, used a little pepper flake and used kale. i love the way the dull kale turns bright green in the soup! absolutely amazing!
