Grandma's Corn Chowder

Fantabulous! Followed the recipe to the T and made 12 servings to last for leftovers in lunches during the cooler days here in Colorado! Will be great with with biscuits... I used Fat Free Half and Half, AND FF Evaporated Milk, and I used turkey bacon. However, I did have leftover bacon grease, so I used that. I am certain this is even tastier with real bacon, and half and half.

Broccoli with Roasted Red Peppers

A winner! I used olive oil instead of butter. So fast and easy. I liked steamed flavor of the broccoli. Normally I would saute them all together.

Bacon-Wrapped Chicken Stuffed with Spinach and Ricotta

I thought this was very good. I opted to skip the bacon. I think it is very important to have equal sized breasts. When I do this again, I will add chicken stock to the pan, cover it, and cook for less time.

Pork Chops Deluxe

The house is smelling good! I chopped onion and garlic, as I do not have any mushies. I poured in about a 1/4 C of Pinot Noir. it's simmering now for 30mins. Serving stir friend green beans and a brown and wild rice medley. Thank you Uncle Bens :-D

Greek Feta And Olive Spread

This recipe has everything that is good and perfect in Mediterranean cuisine! I used sun-dried tomatoes packed in oil and kalamata olives (go for the Kalamata!). I also had to add a bit more olive oil - I think it will vary depending on the moisture content of your feta cheese (mine was pre-crumbled so I think it was a bit drier than a whole block of feta). Also paired it with Lavash cracker bread from this site and it paired well.

Quick Egg Roll Dipping Sauce

Danickstr here. I am now realizing many years later that I had meant this for pot stickers as opposed to egg rolls. I hope it turned out OK for egg rolls as well. I would probably add something sweeter for egg rolls, but maybe not. :)

Peach Cobbler Dump Cake I

Delicious and perfect, exactly as written. I used the method of slicing off thin squares of butter and placing them all over the face of the crumb topping before baking ... it really didn't take long. So easy and excellent!

Snickerdoodles II

Awesome recipe! These cookies didn't have a fighting chance with my family. They didn't even hardly have time to cool off before they were gone. I pretty much followed the recipe completely. The only thing I did differently was I moisten the bottom of a medium glass and dipped it in the cinnamon/sugar mixture and flatten the cookie a little bit. I baked my cookies with a stone cookie sheet and had no problems with sticking. They baked evenly and had a nice soft but crunchy bite to them.

Caldo Verde (Portuguese Green Soup)

I took a little bit of advice from a few of the reviews. I used sauted onions garlic and yukon gold potatoes boiled in 32 oz. chicken broth and 32oz of water. I wilted the kale in broth skimmed off the potatoes and browned slices of Alfrescos sun dried tomato chicken sauage. I pureed the potatoes, kale and broth in a blender and added the sausage. My texture challenged hubby loved it.

Slow Cooker Buffalo Chicken Sandwiches

This recipe rocks! I forgot to pick up a packet of ranch dressing mix so I improvised and used a couple squirts of bottled ranch dressing and it seemed to turn out just fine. My family absolutely loved it. We also used chunky blue cheese dressing as a topping versus extra wing sauce and it was tasty. We'll be adding this to our family favorites and making it again.

Parmesan Sage Pork Chops

This was VERY tasty and actually had a light herby taste - really not what I was expecting from the title. I used fresh sage (because I have loads of it in the garden), dry bread crumbs, and boneless chops - cut 1 inch thick. The lemon flavor was terrific and I also would not skip it. The only thing I'll do different next time is use thinner cut chops or pound them thin and then I think they'd be over the top. Oh, and I also pan fried them and then used the oven safe fry pan to go directly into the oven. If I pound them thin, then I will omit the oven stage.

Baba Ghanoush

I love baba ganoush and will only add that I used one clove of garlic and it still stung my tongue. I guess if my clove is bigger than normal it would function as two or even three small cloves. That is the unfortunate thing about saying a clove, but there is no good measure for garlic. I don't like the canned/jarred type, it does not taste fresh to me. And garlic powder is not going to be better. So maybe just start with one clove of gahlic and see how it tastes to you.

Rosemary Ranch Chicken Kabobs

5 stars - I loved this recipe! I had a package of 4 chix breasts and all the ingredients for the marinade. I chopped fresh rosemary like it called for and it was the perfect hint of flavor. The vinegar definite helps keep the chicken breast moist, so don't leave it out. Cider vinegar would also work... For a side, I made stir fried green beans with bacon bits and red onion. This was a great low-carb meal... next time I will use fat-free ranch dressing!

One-Dish Rockfish

I was pretty faithful to the original recipe. However, I did cut the broth amount in half and substituted fresh dill with dried. Also my fillets were fairly thick and were about 8 ounces each, so that changed the cooking time. I really like the ingredients and the ease to which this dish went together. My biggest complaint was that it was somewhat bland. There was a lot of liquid in the bottom of the dish even though I reduced the amount of broth I used, but I don't see that as a big problem. When you lift the fillets and vegetables out of the dish to serve, the liquid stays behind. It was a good dish. I will make this again, but I will use much more seasoning and I may eliminate the broth entirely. Thanks!
