Fresh Rhubarb Pie

My husband loved it, I didn't use butter in the pie, and only used 1 cup of sugar. I used grandma's secret pie crust from allrecipes. I did make 4 little hole on the top crust before baking, because I was afraid it would be soggy if I didn't. Thanks!

Cinnamon Swirl Bread

This was very easy to make and very good. I replaced the oil with applesauce to help lower the fat and it kept the bread super moist.

Strawberry Pie II

This was a pretty good pie. I put in the full amount of sugar before tasting my berries which led to the pie being very sweet. Next time I will taste the berries for sweetness first because I think I could have used alot less sugar.

Sweet Pepper Pasta Toss with Kale

I used Dino kale, ribs removed, and doubled the amount. I used Barilla Plus penne, and only used 1 red pepper. I also added 4 chopped green onions, green and white parts. I used a little less feta, I love feta but there was a LOT of it there. I always saute peppers first, and then add the rest so the garlic doesn't burn. It was very good. Also, I boiled the pasta in water in which I added paprika, garlic powder and cayenne. I didn't put the cayenne in the dish itself and it was spicy enough for me. Delicious!

Asparagus Swiss Quiche

I did not use bacon, instead I sauteed the onion in olive oil, and then when it was already fairly soft I added the asparagus. I add a few teaspoons of water to the pan, partly covered it, and cooked for 3 minutes or so. I then added this to the egg mixture (I didn't have half and half so I used evaporated milk) and use Monterey Jack because I did not have swiss. I used Grandma's secret pie crust on this site. It was delicious. Thanks!

Sweet Corn Muffins

Very good. Stayed nice and moist. The batter seemed to make more than 12 muffins though, but that was just fine, they did not go to waste.

Creamy Butternut Squash With Cinnamon Soup

Yummy. Instead of the pepper I added nutmeg, and I used milk instead of cream or half and half. Only used about 1/2 cup of milk. Was sweet and delicious and even my five year old enjoyed it.

Cottage Cheese Chicken Enchiladas

Warning: I made some changes! We loved the cottage cheese/sour cream mixture! I used fage greek non fat yogurt instead of the sour cream. Then I simplified this by just using taco seasoning with the cooked chicken and adding in some salsa. Cook on the stove like taco meat. I combined this recipe with another recipe...stuffing cooked manicotti shells instead of the tortillas. Top with cheese and left over chicken mixture and bake as directed. I credit this recipe for the cottage cheese mixture idea :)

Baked Teriyaki Chicken

Good. Baked it in the oven using chicken breast. Only used about 1/2 the marinade, saved other half for over rice. Husband thought it would be even better on the grill. Next time I think that I will put in less pepper because my daughter thought it was a little spicy.

Brick-Oven Pizza (Brooklyn Style)

Very good. I didn't do the 16 hour rise. I just mixed and kneaded the dough, and let it rise for 3 hours (it was about 71 degrees in the house, and the cold water slowed the rising). My oven only goes to 500 degrees, so I baked it a little longer. I also added veggies on the pizza, and fresh tomatoes instead of canned. Will make again! Thanks :)

Simple Beef Stroganoff

Not bad when you are looking for something quick and hearty. I added in some fresh garlic and onion as well as 1/2 c beef broth to thin down a little. If I were making it for just myself and not husband and daughter I would add in some fresh mushrooms as well.

Chicken Fried Chicken

Very good basic recipe. I pounded the chicken first so that it would cook faster, and kept warm in the oven. Made some homemade white gravy and served with mashed potatoes. True comfort food.

Slow Cooker Sweet and Sour Kielbasa

I had to modify this for a quick stove top meal, but the kids loved it! I did halve the ketchup as suggested and I also halved the sauce recipe as a whole. I boiled the kielbasa first in water on the stove top. Then I mixed the sauce together (I was out of cider vinegar so I used regular vinegar) and I also used regular mustard to tone it down for the kids in my daycare. I left out the onion and didn't use any hot sauce..which made this sauce a lot like a ham ball sauce. I cut the kielbasa into coins then halved the coins and simmered the sausage and the ketchup concoction on the stove for about 30 min., the last 10 min. I covered the sauce so that it wouldn't get too stiff to pour over noodles. The kids really liked it! I served it over wheat noodles. will make again sometime..it was quick and easy. Would probably be even better in the crock pot!
