About me:
I'm a student at Iowa State University and I cook for my fiancee most every night. He's a little picky and hates vegetables, but I'm slowly getting him to eat them! My mom is a wonderful cook, and a lot of the recipes I have are from her collection.

A little too rich for our taste. Tasted like a giant casserole of ultimate mashed potatoes.

Made for the hubby ahead of time and froze for when I was away. He said it was excellent. Great freeze ahead recipe.

Zucchini Brownies

Very good! So rich and dense that no one will know the have zucchini in them unless you tell them. I did peel my zucchini so it was not seen by my kids. A great use for the giant zucchini's from the garden.
