Super easy and soooooo delicious! Was out of garlic, so substituted garlic salt. PERFECT! We substituted grilled chicken! LOVE this recipe!

Jamie's Cranberry Spinach Salad

Wow. I was totally skeptical--how does a salad get all those great reviews? All I have to say is don't knock it till you try it. Why in the world is this so FANTASTIC? I don't know--but it is. (I used 1/2 Splenda instead of all that sugar and no-trans-fat margarine, but the rest is exactly the same.)

Mexican Bean Salad

Fantastic! My only substitution was using 1 tablespoon of Splenda instead of 2 tablespoons of sugar. So, so good. Even my fiance, who does not like beans, ate almost more than me! A great way to eat fiber and have a meatless dish that is so, so filling. I bought chicken, but I didn't even make it--I just ate the salad.

Quinoa and Black Beans

Obviously, I liked this as I prepared this recipe for the second time. I adjusted the liquid to a 1:2 ratio and soaked the quinoa for ten minutes - as per the advise of many reviewers. This time I added drained tomatoes and red, green and yellow peppers. Even better!

Cheese and Sausage Stuffed Zucchini

I went looking for a "vegetable and cheese" dish, and this really exceeded my expectations! To make it lower calorie and lower fat, I used 2% Colby cheese, lowfat cottage cheese, and Italian turkey sausage. I also used 1 can of drained diced tomatoes with Italian seasoning. I also did not cook the zucchini first, and it was just fine, but I used three regular-sized store zucchinis, not huge home grown ones! I thought it was great!

Swiss Cashew Tossed Salad

This recipe is just plain fun! Change it up a little with fresh blueberries, strawberries or orange slices! Used toasted or candied pecans, sunflower seeds, or ramen noodles! Toss on some chow mein noodles for crunch! Grill chicken and lay on top for a summer dinner salad! Play!

Bake Sale Lemon Bars

Made these for a baby shower but didn't double the crust as I was low on powdered sugar. Will definately do that next time as there was only a thin layer of crust. I also softened the butter a little too much and the crust turned to mush, which caused it to stick to the pan when I cut the bars.

Slow Cooker Swiss Steak

Lightly coated the steak with the flour mixture and I put it right into the crock pot without browning. Still turned out great. Very tender. My boys are meat eatters and they ate most of it by the time I got home from a baby shower. Next time I'm going to try the mushroom version.

Whiskey Chicken

Yummm... my family loved it! The only ingredient I left out was the whiskey because we didn't have any, but even without it I liked the flavor. Sort of sweet and savory! This is actually the closest I have come to the sesame chicken recipe at our local restaurant. I cut up the meat into thin strips cooked them in canola oil because I didn't have olive oil. Added the sauce a few mintues after the chicken. I also used about a teaspoon of cornstarch. Served it with Chinese Mie noodles and sugar snap peas!! Next time I'm going to use the whiskey and add more cornstarch because I like the sauce to really stick to the chicken.

Misti's Chicken Marinade

This marinade was great. My husband and kids loved the flavor. I cut the chicken breasts down the center because we like thinner pieces. I only marinaded the chicken for about 30 minutes and cooked it in a frying pan with a little of the juices. Turned out really well and gave the chicken a nice brownish hue. Would be great the next day in a chicken salad or quesadialla.

Chicken Fried Steak III

Jalapenos del Raton

Great! I tried 1/2 turkey bacon and 1/2 center cut "real" bacon (the kind that has as much fat as many turkey bacon strips), and the center cut bacon was better. I also used reduced fat cream cheese and hot turkey italian sausage and cooked in the oven at 375 for 35 minutes. Really, really, great!

Classic Spanish Sangria

I used merlot, splenda, pears, peaches, and oranges. I loved the pears! I thought it was very good, but it did get some of my friends a little loopy, so i ended up diluting each glass with about 1/2 sangria, 1/2 diet lemon-lime soda.
