Bran Flax Muffins

This is a great recipe! Most baked goods containing flaxseed or oat bran that I've tried tasted gross but these little muffins are delicious. I followed the recipe to the letter with the exception of substituting 2 tbsp of veg oil for applesauce. Also the recipe says it makes 15 muffins but my batch made 24...you won't hear me complain about that though!

Baked Omelet Squares

This is really great! We were looking for a new breakfast idea, and this fit the bill. Love the cheese layer at the bottom. I sauteed one onion, one green bell pepper, 1/2 red bell pepper, and fresh mushrooms for the veggies. No black olives or jalapenos--just didn't think we would like it in the morning, but I'm sure it would be good.

Easy Red Beans and Rice

This was great with the addition of a little cayenne pepper and some celery. I have had traditional red beans and rice, and while this is not the same, it is still really, really good for what it is. Just add some additional spices if you like it spicy! Even my boy loved it, although he has seen me eat red beans and rice at cajun restaurants and declared it looked "disgusting."

Shortcut Minestrone

I really enjoyed it! I skipped the brown sugar, added some salt and pepper, and put in zucchini with the bean/spaghetti sauce step instead of adding frozen green beans at the end. Oh, and I made sure I bought a decent spaghetti sauce--one that I would enjoy on pasta. Thanks for a quick, easy, healthy recipe!

Chicken Tetrazzini I

Very good. My fiance doesn't like red-sauce pasta dishes, and I don't enjoy alfredo, but we both like this. My dad used to make it for me when I was little :) I used fresh mushrooms and whole wheat pasta, and all cream of mushroom since that's what I had on hand. It worked well! Thanks!

Campbell's® Quick and Easy Chicken, Broccoli and Brown Rice Dinner

This was ok. Campbell's has a recipe on their broccoli cheese 98% fat free soup that calls for similar ingredients (minus the rice/current soup and add the broccoli cheese soup) that is SO much better, doesn't need a ton of added spices, and we eat every other week (and I like cheese but I don't love broccoli cheese soup). I won't make this again--just add rice to the other recipe.

Tangy Slow Cooker Pork Roast

This is AMAZING. We have used it for pork loins and chicken breast. Both are great. If we get tired of the tangy taste, we put it on sandwiches with bbq on top. I LOVE it, and my fiance loves it even more. Thank you SO, SO much.

Make Ahead Lunch Wraps

Whole-Wheat Chocolate Chip Cookies

Thank you for the idea, but it didn't really work for me. The ones I took out after 8 minutes were ok, but the others I let cook for longer than that were rock-hard crispy. Maybe that was my oven, but even with the cripsy factor, the first day, everything tasted fantastic. In fact, the dough tasted great (yes, I know I shouldn't be eating the dough). But, more than one day after cooking . . . not good. So hard and not very appetizing. I will try to make some changes and see if I can modify it to work out for me.

Brown Rice and Black Bean Casserole

I thought it was really good, but the only thing I would recommend would be to skip the carrots. They are nice for color (otherwise this is a bit bland in color), but I even sauteed them to try to make the contrast in consistency go away (as compared to the other ingredients) and they stuck out like a sore thumb. Maybe my carrots were too thick--I don't know. Other than that, fantastic, and very healthy. I used the "mexican" blend of cheese with 2% milk as well.

Korean Salad

I have had this recipe for 30+ years as well. I would not change a thing! We always serve the dressing on the side, which allows those who prefer it a little on the lighter side to achieve their taste preferences! The only problem that we have ever had is that my husband and son like to swipe the crispy bacon off the top, so I always add extra so there is plenty to go around! This salad has been requested every year for every family picnic, Christmas and NY event! DELICIOUS!

Spinach Stuffed Chicken Breast

I made this on a whim and got rave reviews! I did not, however, make as is--I sauteed onion, garlic, and about 1/3 of a package of frozen spinach (use good quality--the generic frozen spinach can RUIN a dish), as well as a 1/2 of a can of diced italian tomatoes. Used reduced fat mozzerella and ff sour cream and no one can tell the difference. Seasoned the chicken with seasoned salt and pepper. Oh, and I also used turkey bacon (can you feel the low-fat theme?). Overall a great base recipe that any cook with a bit of knowledge can make to work for them--it is a bit messy, though, so I would get someone to help prep.

Whole Wheat Banana Nut Bread

This was fantastic. I maybe would want it a little tiny bit sweeter, but as is, it is still really good. I used 1/2 honey and 1/2 brown sugar splenda for my sweetener, so maybe that is where I went wrong on the sweetness. I also used applesauce instead of oil, and it was still moist and the texture wasn't off at all, and that is a five star accomplishment in my book any day. Very healthy--a big slice is great for breakfast on the go! Update: for those who thought it should be more moist, I would say add more banana. This last time, I used 5 medium-to-large bananas, a teaspoon of cinnamon, and it was the best ever!

Cake Balls

This is similar to a recipe cake decorators use, to use leftover cake scraps (left from cutting cakes into shapes/sizes, or the scraps from cutting the cake tops off so the cake is level). Instead of frosting, we mix the cake crumbs (any flavor cake) with flavored liquid coffee creamer (again, any flavor.) You can mix and match various creamer and cake flavors to make custom cake bon-bons. Just add enough of the creamer to the cake crumbs to make a paste; shape into balls and chill. When firm, dip in melted chocolate.

Toasted Pumpkin Seeds

Garlicky Baked Butternut Squash

I really liked this! I have never had winter squash before, but I bought one and looked on allrecipes to find a dish. We love garlic, so I thought we would like this, and we did! Followed the suggestion to pierce and microwave the squash (8 min) for easy peeling, and it was still a little difficult to peel and the SMELL almost made me throw it away. ICK. But, I went through with it anyway, and it turned out great. I added the parm 1/2 way through, and when the parm gets a little crispy, those were the BEST bites. Yum. THANKS!!

Marinated Tuna Steak
