Pumpkin Pancakes

Reviewed: Nov. 29, 2009
These pancakes were light and fluffy and not too sweet. The only modification I made was to double the recipe and add extra milk (about 1/4 to 1/2 cup). Served with regular maple syrup. YUM!

Only changes made were to crumble a few tablespoons of brown sugar on top of the crust and to bake for 45 minutes.

This is a great recipe I took half a cup of sugar away and it is still very sweet but thats good because I have a sweet tooth. In this recipe you could put in beries, any zest or what ever you like! Instead of margrine and shorting you could se butter. I took cream chesee frosting and melted it in the microwave and drizzeld it on top. This is great will make again!

This recipe is AWESOME! So buttery and yummy. We only had 1/4 c soy when we made this, so modified by using an additional 1/4c teriyaki and 1/4 c worcestershire sauce. BRILLIANT!

Best Big, Fat, Chewy Chocolate Chip Cookie

Reviewed: Feb. 9, 2009
I made these tonight, turned out really well for me by using softened butter (I had already creamed the sugars and butter before realizing it was supposed to be melted) and it turned out fine without chilling the dough. I liked these quite a bit but will probably experiment with making them a bit smaller in the future.

Sugar Cookie Icing

Reviewed: Feb. 5, 2009
We used this at Christmas this year on our cutouts. The cookies do turn out beautiful with this icing and they taste pretty good. My mom adored this recipe, and I thought it was pretty good (although I like a thicker fluffier frosting on cutouts.)

Baked Chicken Nuggets

Reviewed: Feb. 4, 2009
I often buy my boneless skinless chicken breast from the grocery store in jumbo packs. I often have a lot of trimming to do before I freeze the chicken in meal size packages. I usually end up with some pieces too small to be frozen with the chicken breast but large enough to keep for chicken tacos or chicken for on top of salads. I tried this recipe instead last week and it was a winner. They taste so good that you don't even WANT any dipping sauce to go with them.

Balsamic Roasted Red Potatoes

Reviewed: Feb. 4, 2009
Made these tonight with some seared boneless pork loin chops. I don't think I will make these again as directed. They smelled and looked great until I added the balsamic vinegar. I tried to stir this in slowly and evenly but the potatoes turned out soggy even after baking for an additional 10 minutes beyond the baking time indicated in the directions. I would make the base recipe again and leave out the balsamic vinegar at the end.

Peanut Butter Chip Chocolate Cookies

Reviewed: Feb. 1, 2009
Turned out really good. The only thing I did differently was chill the dough overnight (which was done because I was too tired to bake them that night, not because I wanted to change the recipe.) Because of this I had to flatten the balls of dough out using the bottom of a glass. I made them using the small pampered chef scoop and baked for exactly 8 minutes.

Brooke's Best Bombshell Brownies

Reviewed: Jan. 17, 2009
Have been meaning to review this one for some time now. I adore this recipe. Have made it as is, with exception of melting the chocolate chips instead of leaving them whole as I don't like the chunks of chocolate chips. I now only make this with a blend of natural and dutched cocoa for a darker chocolate flavor, but the recipe is amazing even exactly as written out.

Black Bean and Salsa Soup

Reviewed: Jan. 17, 2009
I have been forcing myself to eat more beans because of how healthful they are. Even so, after making this exactly according to the recipe, I realized it was a bit too beany for me. (I always prepare recipes exactly as written the first time, because you cannot very well review your own alterations and then rate the recipe.) Rinsing the beans not only cuts back on the sodium in this recipe, but also improves the appearance, as it lightens up what is already a very dark colored soup. I would probably add a lot more salsa or other tomato based products if I were to make this again.

Brown Sugar Meatloaf

Reviewed: Jan. 17, 2009
When I first read this recipe, I thought, that's going to be too sweet. But then I saw all the very positive reviews and said, what the heck... I may be wrong. I made this exactly as the recipe is written out, and found myself wishing I had listened to my instincts. Too sweet for my taste, and I'm not sure I like the ginger in a meatloaf. That's probably just me though, because I like a more savory than sweet flavor to meatloaf.

This was a very easy recipe for a quick...I just got home what can I make for dinner?? If you have salmon on hand of course. The syrup was not too overpowering. Just PLEASE make sure you use REAL maple syrup. You will not get the same taste with an imitation.

This was an alright recipe. I thought it was a bit too bland. I also recommend cooking the veggies seperate from the fish, the water from the veggies, made the fish watery and took longer to cook.

My husband LOVED these brownies. I am not a big fan of cherries to begin with so I thought they were a bit too tangy for the brownies. They were still good though. Will use this recipe again.
