Camper's Breakfast Hash

We liked this! Something different while camping. We put the mixture into tortillas for breakfast burritos and served with salsa and sour cream. You can generously fill 10 10" tortillas with this recipe.

Marinated Mushrooms II

Everyone loved these. I simmered for the full 12 minutes and then refrigerated overnight. The vinegar wasn't overpowering to me, as some reviews have stated. Great cold appetizer!

Glazed Meatloaf I

This was great meatloaf! I like that in using beef bouillon you are reducing the sodium by a TON compared to using Lipton onion soup mix (like I usually do). The only thing I would do different is make more sauce for dipping because it's so good!

Buffalo Chicken Fingers

These were pretty good- they got nice and crisp; however, if you aren't going to dip them in something, I would suggest adding more seasonings as they were a little on the bland side by themselves. I wouldn't really call them "buffalo" though- they taste nothing like buffalo style chicken. One more thing- this will cover 2 large breasts of chicken. The recipe calls for 4, but make them small ones if you do that. One more tip: grease your pan even if you are using one that is non-stick!

Flax and Sunflower Seed Bread

Cheddar Baked Chicken

Despite all of the rave reviews, I thought this to be just ok. I didn't like how soggy the bottom got, but maybe baking on a bakers rack would help that. The chicken was moist and the flavor was pretty good though, although if I make again, I will use fresh garlic instead of the powder.

Chickpea Salad II

This recipe is great if you switch the amounts of vinegar and oil- 3T oil and 1 T vinegar. Doing that makes for a great summer salad.

Tasty Tuna Burgers

I didn't like these. The inside was very mushy, and i even cooked them a little longer than suggested. I thought with all of the ingredients, the tuna flavor would mellow out some, but it doesn't. Sorry, but I won't be making these again.

Peanut Candy Bar Cake

Not sure where the "cake" portion of the title came from because these are definitely bars. And good ones! The regular bags of PB chips are 1 2/3 c. but I found that you really need the additional 1/3 c. to cover all of the marshmallows.

Spiced Sweet Roasted Red Pepper Hummus
