Quick and Easy Alfredo Sauce

This recipe was just ok for me. The sauce was very thick and I kept having to add milk to thin it out. It thickened even more after I put it on the pasta. Maybe I did something wrong... I'll have to try again.

Cucumber Sandwich

Reallllly good sandwich, especially on a hot summer day. I omitted the avocado (ONLY because I didn't have it on hand) though I wish I would have had it. Used Panera's low-fat veggie cream cheese and it tasted great. I wouldn't change a thing!

Beef Enchiladas II

I make these easy enchiladas all the time... the key word is easy. Instead of the sauce mix, I buy a can of enchilada sauce. I pour some in with the ground beef to give it a nice flavor. They re-heat well the next day. Also, I don't see the problem with flour tortilla shells. This recipe never promised to be 100% authentic. For personal taste, my boyfriend and I prefer the flour shells in this recipe... he requested them for his birthday dinner! For a cheap meal that can be done in about 30 minutes, this is a keeper.
