Chicken and Stuffing Casserole

Reviewed: May 14, 2008
i loved this dish. i was craving stuffing so bad and this was so easy and hit the spot perfectly! i did make alot of changes though, lol. i cut the recipe in half because its just the two of us, i used one can of cream of chicken, my own homemade chicken broth, and the half cup of evaporated milk it called for. i sauted the chicken with lots of garlic and celery and added it to the bottom of my baking dish. poured a can f corn on top, added the stuffing and then the sauce. when i pulled it out of the oven it looked a little dry so i ended up pouring the rest of the evaporated milk on top. it turned out PERFECT.

Sunshine Toast

I used to make this about 15 years ago...I learned it in Home Economics class in High School. It was fun to make again, I loved the tip with sprinkling cheddar cheese - nice touch and flavor!!

Cajun Chicken Sandwiches

Reviewed: May 13, 2008
Very good and very easy! I used a whole breast with rib meat and got two sandwiches out of it. I buttered the sandwich buns and put them on the grill with the chicken for the last 5 minutes of cooking.

Big Al's K.C. Bar-B-Q Sauce

Reviewed: May 13, 2008
YUMMY! I halved the recipe and used it for the BBQ Pork for Sandwiches recipe on this site. I only used 1/2 the vinegar though. Also, I swapped the celery seed and salt for celery salt instead.

Hash Brown Casserole I

Reviewed: May 13, 2008
i omitted the onion and hot pepper sauce, added minced onion, pamrsean and herb seasoning and used cream of mushroom soup. this turned out pretty good, i think i used too much sour cream( i never measure, lol) but i would make this again. my bf LOVED all the cheese on top.

Ronaldo's Beef Carnitas

Reviewed: May 13, 2008
I doubled the spices like other reviewers suggested. I used one can of mild chiles and one can of hot. I like spicy food, but the spice stayed with me. My husband really liked this recipe, which we ate with rice on the side. Next time I think I'll stick with just mild chiles. EDIT: Ok, I just heated up some leftovers for lunch and had it on a tortilla with onions, cilantro, a squeeze of lime, a little cheese and sour cream. This was better than leftovers are allowed to be!!!

Amish Cookies

Reviewed: May 13, 2008
I made a few adaptations to these cookies. I used 1/2 cup shortening and 1/2 cup oil, mostly because I had never used oil in cookie before and was nervous. I also added cinnamon, nutmeg, and allspice to the dough. I rolled my cookies in cinnamon sugar before baking. I liked that these cookies were light, not too sweet and not too rich. My husband wasn't a fan, but I ate these cookies six at a time! Which means I probably won't be making them again! :)

Corn Dog Casserole

Reviewed: May 13, 2008
the main thing I would change is that the hodogs would be better sliced thinly or died up so that it was more even throughout. Othrewise very good and everyone ate it up!

Banana Pancakes I

This was great, followed it as written and it was great. Banana flavor was very evenly incorporated and the batter was a great consistency. Next time might add cinnamon+vanilla. The guys said it was like biting into banana bread. :) Thanks!

Bacon for the Family or a Crowd

Reviewed: May 12, 2008
Four stars for as written, 5 stars if you follow suggestions. I foil-lined a jelly roll pan, used a cookie rack for one, broiler pan for the other. Took ~25 minutes for medium-sliced bacon. The 3 men I served were very complimentary about the flavor but lack of grease. Great recipe!

Absolute Best Pancake Syrup

Reviewed: May 12, 2008
This was wonderful. I'd never made syrup before but it was much more flavorful than store-bought syrup and very fun to make. I used a 4.5Qt saucepan and it handled the foaming fine, and I'm glad I listened to that suggestion. Followed the recipe exactly. :D Thanks so much!
