Amazingly Good Eggnog

Reviewed: Dec. 24, 2009
Wonderful recipe. Mine took 9 min. to get thick, kept putting my timer on 3 min intervals. I used 1 1/2 cups of rum., figured we can always add if we wanted to. Taste's great at room temp. Can't wait to try it tomorrow for Christmas. Thanks for a great recipe. :)

Chocolate Chip Banana Muffins

Reviewed: Dec. 23, 2009
after reading many of the reviews i used 1/4 applesauce and 1/4 c oil, used 3 bananas instead of 2, and used half brown sugar and half white sugar. i used yogurt as the recipe called for instead of milk. i think the extra banana eliminated the need to add milk as many reviewers claimed. i also wet the chips and floured them to prevent them from sinking. i sprayed my muffin tins w/ pam and didnt need muffin liners. i thought these were very good w/ enough banana flavoring for us. i will make these again w/ the changes i made except i will try all applesauce (no oil), decrease the amount of choco chips, and make sure to mash my bananas very well. there were a few mushy parts where i didnt quite mash them enough. mine were done at 22 mins.

Spinach Salad Supreme

this was very simple and yummy. i had to leave out the green pepper because i was out and i nuked the dressing because it was a cold night . most of the reviewers tried this w/ apple cider vinegar. i was almost out so i tried it w/ red wine vinegar and it worked great. went well w/ stuffed chicken leg quarters and poppy seed buttered noodles

Very good recipe. I did as others and decreased the mayonnaise to 1/2 cup and I used panko bread crumbs as well. Very good and gourmet, impressed my honey and myself! A must try!

Ting-Town Barbeque Beef Sandwich

Reviewed: Dec. 23, 2009
I admit it makes no sense at all, but it was mostly nostalgia that drew me to this recipe. Coming from the Iron Range of Northern Minnesota myself, it somehow felt like "home." But it takes more than sentimentality to make a great recipe and this one missed the mark for us. With all the ingredients involved I anticipated something indescribably fantastic, but in the end it was just predominantly sweet and all but masked the rich, beefy flavor you'd want and expect - edible, but not a repeat.

Pumpkin Turkey Chili

Reviewed: Dec. 21, 2009
i will make this again w/ the changes i made. i used a 28 oz can of tomatoes according to the reviews and the consistency was just right for us. i also added some pinto beans. i keep a taco seasoning mix on hand so i added the equivalent of 1 packet. i still ended up adding cayenne. if you like flavorful chili you will need to REALLY increase the heat. i think the pumpkin masks it. i was very surprised that you couldnt even tell the pumpkin was in there. a great idea to use up some of the pumpkin puree in my freezer

Hearty Garlic Potato Soup

Reviewed: Dec. 21, 2009
i would recommend using spicy italian sausage. this turned out really bland. i ended up adding crushed red pepper and garlic powder. i had to cook it longer to let my added spices blend in. we had to wait longer for dinner which was a little annoying

Nacho Cheese Sauce

this was really good. i had half a jar of salsa in the fridge so i threw that in to stretch it for a party. i kept it warm in my lil' dipper crock pot. cheaper than buying the jars of queso w/ ingredients i always have on hand

i used less oil and these turned out very good. i made these all the way through the step of adding the cheese. then the day of the party i just broiled them a few minutes. they took longer than 20 mins to prepare but they were a perfect make ahead app that i will definitely make again

Two-Time Winner Chili

This has been modified for a person with major heartburn problems. It was a HUGE hit though. The only thing that made me go down 1 star is I don't add beans to it and most people like beans. So this was a compromise.

Mozzarella Puffs

Reviewed: Dec. 21, 2009
I made these for a Christmas get together. Everyone that tired them loved them, there were still plenty left, but these were the last thing served so I think that people were just full. Need to make extra sure that the bottom's are sealed well, and that the cheese hunks aren't too huge. I think I would also put a little sauce on the inside. I would also maybe brush the pizza sauce on the tops to make sure it's a bit more even, and THEN go back and spoon a little bit more over.

Potato Skin Poppers

Reviewed: Dec. 21, 2009
I made this for a Christmas get together, and they were a huge hit. Everyone was fine with how they tasted, said not to change anything. For me though, I would change a few things. I would add more green onion and perhaps use two different cheeses, not just the cheddar. I would also perhaps use the butter option as I didn't this time. Other than that they were very good.

Hungarian Mushroom Soup

Reviewed: Dec. 19, 2009
Hubs and I found this soup excellent, exquisite and extravagant, but unfortunately we also both agree it falls short of perfection just for the fact that it calls for about twice the parsley it should. I used an "exotic mushroom medley," (package description, not mine) which gave this great texture, different shapes, and bold flavor. The dill and lemon both play their parts and have important contributions. I used a good, sweet Hungarian paprika which really makes a difference in the final result. Just delicious, but you kind of have to wade through the parsley!

Chocolate Chip Sprinkle Cookies

Reviewed: Dec. 19, 2009
Hubs said he could eat these till he got sick. When he says that, it's the highest form of praise. He also called these "chocolate chip cookies on steroids" and if you ate one of these you'd find that a very apt description! The oatmeal and Rice Krispies give these an unusual but pleasant texture for a chocolate chip cookie, kind of airy/crispy in places, but at the same time substantial. Delicious on their own, but the sprinkles really make these special, colorful and festive. I skipped the nuts since there was a lot already going on with the chocolate chips, oatmeal, Rice Krispies and sprinkles. Since I made these for Christmas I used a red and green Christmas sprinkle and they turned out so pretty! Hubs and I got a real kick out of these!
