Don't let the list of ingredients fool you. This is super easy, and gets rave reviews whenever I serve it. The salsa can be made the day ahead to save time. Strawberries can be substituted for the mango if you prefer - both are excellent! Combine leftover salsa with some drained black beans the next day for lunch.

Make this classic lasagna recipe zestier by using hot Italian sausage or a little milder with regular Italian sausage. Don't be scared off by the long cooking time. The wait is well worth it. It's a great dish to make for a crowd and easy to adjust for varying tastes. The leftovers are even better when reheated the next day.

Tired of ordinary old apple pie? Well this fabulous recipe adds a delicious twist to the apply classic. Sliced, unadorned apples are mounded into a pie crust and topped with a lattice crust. Then, just before baking, a sweet, thick sugar syrup is poured carefully onto the crust. An hour later, the apples are tender and fragrant and the crust a glistening brown.

The ultimate Super Bowl party sub. This is intended to feed approximately 8 people and weighs in at over 6 pounds. A loaf of French bread is layered with 6 pounds of meat and cheese, with one or two vegetables thrown on for good measure. Remember to lift with your legs, not your back.

This recipe was devised a long time ago by a mother who helped a group of first graders prepare a treat in class. There were enough ingredients for each child to lend a helping hand. Through the last 20 years, I enhanced and revised the recipe. Adults and children alike love it!

This onion dip is a hit with all of my friends. Sometimes I throw in some fresh herbs from the garden too. They can't believe it isn't made with sour cream because it tastes great! For really low fat, use nonfat plain yogurt. Perfect for dipping potato chips or veggie sticks.
