'Day Before Payday' Kielbasa and Potato Hash

Easy, tasty and so nice to have all the ingredients on hand. I decided to omit the corn and eggs as it already made ~6 servings. I used 4 red potatoes and 1 sweet potato (a must!) and put them in ~10 minutes early to allow them to cook through. I used 2 fresh bell peppers and 1 1/2 onions. MMmmm! This will become a staple! :)

Pumpkin Brioche

I have never made a brioche before, that said, I'm not sure how badly I screwed this up. So I'm extrapolating. I neglected to let the dough rise the last 40 minutes in the pan. Entirely my fault. The flavor, however, was very mild. I was very nervous about how wet the dough was, but after refrigeration, it set right up! I would increase the spices and possibly use 2 pans. The directions say one pan, one loaf, but mention "pans" later. Perhaps 2 pans are needed? In 1 pan, it rose tremendously! I'll try this again and perhaps follow the directions better... :(

Vienna Schnitzel

We used fillets from a turkey breast; tender, savory, paper thin cutlets stayed tasty and moist in their crispy, mellow breading. A squeeze or two from a lemon wedge helped wake the dish up a bit, as well. With the simplicity of ingredients (though, and maybe it was just me, the cake flour seemed to make a big difference), this recipe is more about technique than anything else, and it's a technique a plan on mastering by cooking this over and over again.

Turkey Macaroni Bake

Yes, it's bland, but that just means you can add your own touch. I used cream of celery soup, a cup of half and half, and left out the mushrooms, since I'm the only person in our family who likes them! I used fresh-ground pepper and 1/4 tsp Bell's poultry seasoning. Next time I'll try curry. As for the question of pre-cooked or uncooked macaroni: I didn't want to precook the macaroni, since it's a big part of the convenience of this recipe. I added 1/2 cup chicken broth, and that solved the problem. No leftovers, and there was squabbling over the last serving. Super easy to make. A winner all round.

Baked Kale Chips

Yummy! I used frilly red kale from the farmers market, and cut the entire stem out of the leaf. I didn't bake as long as suggested - I checked on these a couple of minutes before the suggested time, and they were done. The consistency is kind of chip-like, and the flavor is interesting. It makes a nice salty TV snack!

Eggplant and Zucchini Casserole

I use this as a base with other leftovers... use thanksgiving dressing, grilled vegies, etc depending on time of year and what I've got. I typically add either chicken or turkey also!

Mmm! Yum! These were delicious and not difficult to do at all! We used a spoon to hollow out and to stuff. A deviled-egg dish worked well to keep them from falling over. Next time we'd add freshly cracked black pepper. Thanks Catmaniacs!

Blueberry Lemon Pound Cake

I've made this one 3 times now and each time I've gotten great reviews! I've wanted a lemon-blueberry flavor, so I substituted a Pillsbury lemon cake mix and omitted the pudding. Icing was just powdered sugar, milk, lemon extract. It was great! Will use many more times! Thx for the great recipe! **UPDATE** Accidentally left out the sugar, too, and I love how it's a simpler flavor and not so sweet! I'll be omitting the sugar and pudding in the future. Love it!

Chicken Lo Mein

Yum, we've made it twice now, once following the recipe time and have had great results! We even screwed it up by using "rice sticks" noodles instead of linguine which were difficult to get sauteed/fried. Dumping everything together in an attempt to soften them with a LOT of stirring worked well. Supper was a success! Next time we'll try adding carrots and snow peas. Yum! Thanks Meesh!

Pumpkin French Toast

Delicious! We doubled the pumpkin puree and still found the pumpkin taste to be pretty subtle. I would not increase the pumpkin past 1/2 cup or the egg mixture may lose its consistency. I added a splash of vanilla extract (personal taste). Using Texas Toast, this recipe made 6 slices = 3 servings. Either add 2 t. sugar or serve with powdered sugar or syrup. This was fantastic, we'll make it again.

Whole Wheat Snickerdoodles II

My daughter and I just made these cookies and are having a hard time leaving them alone! Totally delicious! Since we didn't have any whole flour on hand, we just used all-purpose flour. Still turned out awesome. Will try with the WW flour next time!! :)

Pumpkin Fritters

I wasn't crazy about how these turned out. I didn't taste much of the pumpkin and then I added a little too much extra salt. And then something happened when I cooked then because when I served them, half of them were just batter on the inside. I'll try them again soon.

Pumpkin Cranberry Bread

I made this without the walnuts. It was really tasty, but didn't expand as much as I thought it would. I might add a bit more baking powder next time so it's a little less dense.
