Red Velvet Cake IV

Very good! Will make it again. I just iced it and had the 1st piece. Next time I will make it 4 layers as each layer rose to full layer height. Icing is good, but I prefer a thicker sweater icing (only think keeping it from 5*). This is not real sweet, but is very very light and fluffy - not bad, I just have a terrible sweet-tooth! Very easy to make. It's a keeper!

Hobo Pie

I love these! My family also calls them Hobo Pies. Our favorites are pizza pies & cherry pies. For pizza pies, butter the bread as usual, then use ready-to-use pizza sauce, mozarella cheese, and pepperoni. Another idea is to use peanut butter, a marshmallow, and a chocolate bar for a Rocky Road treat. Be careful with the irons and the pies because they are VERY HOT.

Good Old Fashioned Pancakes

I made these before my husband had to go to work. He ended up late for work! :) These pancakes, in my opinion, are much better than even IHOP pancakes! Make sure you watch them carefully so they don't brown too fast. The cook quickly! I added fresh blueberries before I flipped them on the grill. Yum!

Amish White Bread

This recipe has made my shopping budget so much better! I can whip up two loaves of bread in no time rather than paying $6 in the store. Using a dough hook, whether on a kitchen aid mixer or a hand-held, has made all the difference for me. My husband says, "MMM! Wow!" any time he takes the first bite of bread, whether as a sandwich or fresh out of the oven. We love it! :)

Yummy! Going to try it with mangos after I finish this batch. We made up a "pina colada martini -2 parts pineapple vodka, 1 part coconut rum, half a part half and half shaken with ice then strained. Yummy!

Simple Sicilian Salad Dressing

So fresh and easy. I tripled the recipe and grated in one clove of garlic since we like that. Friends raved about the salad (romaine, carrots, bell pepper, chyote, feta) with this dressing.

Potato Leek Soup III

Chayote Squash Side Dish

Lamb Chops with Balsamic Reduction

It's hard to go wrong with lamb, but this was a great simple recipe that was just delish. The weather was perfect for grilling today, so I did a quick sear of one side of a rack of lamb in the pan, then I moved it to indirect heat on the grill to finish for that smokey flavor. Plus I had the pan drippings from the one side sear for the sauce. I served it with a leek risotto, roasted red peppers and peas. Delish.

Nutmeg Mushrooms

Very good, however I sauteed pearl onions and the mushrooms in olive oil. I also reduced the amount of wine to an 1/8 cup which I then reduced in the same pan as the onions and mushrooms. I added 1/4 tsp of nutmeg and 1 tsp of cinnamon. A pinch of salt to enhance the sweetness. It's a nice side or topping. If you don't care for the sweetness of white, then use red. This recipe is definitely for sophisticated taste buds.
