Mexican Chicken I

Amazing! My boyfriend and I tried this about 2 months ago and I make it probably once every two weeks. I tweaked it because I don't usually have black beans so we use corn instead. Over rice with some shredded cheese and sour creams it's amazing!

Mouth-Watering Stuffed Mushrooms

Best Ever Caramel Apple Crisp

OMG! This is unbelievable! I THINK you should go for the 8X8 pan! and not 9X13, this is made to be thick and juicy! the topping is unbelievable! and what i did, i had a jar of smuckers caramel, nuked it for 45-50 mins, pour some over the apples and the topping, you dont need much, this is a very filling desert! p.S my husband doesnt like apple crisp (cinnamon thing!) He loved this dessert! and i served it with a big dollop of cool whip! mmmmmm

Tasty Tuna Pasta

This was super fast and easy. I added some sirracha hot sauce because my boyfriend loves the stuff and the extra kick was great! I also used angel hair pasta and two cans of tuna for the extra protein. Will make again!

Yum! Used low fat miricle whip and canned chicken. Very good on a roll for a quick lunch. Does take longer than 20 minutes to prepare though.

White Chili

Pretty good- substituted chicken for turkey and doubled the batch. Added cumin and chili powder. Served at our superbowl party and people ate it like a dip with Fritos.

Greek Garbanzo Bean Salad

Good way to get lots of veggies and protein in! Next time I will dress this with an olive oil, garlic, lemon vinagerette- I didn't care for the tangy-ness of the Italian dressing/lemon juice combo. Have a piece of gum ready after you eat this, it's pretty strong!

Chicken Fried Chicken

MMMM So good! Added some additional spices to the cracker, flour mixture and dipped chicken breasts in flour, then egg, then the crackers. Fried up nice and golden and crispy, it was just perfect! Just have to turn down to about medium low after the chicken browns on both sides so it doesn't burn while it continues to cook through. Served with mashed potatoes, corn and biscuts. We loved this!

Hamburger Gravy

I have been craving the darnest things since being pregnant, hamburger gravy being one of them! I added frozen peas and some chicken broth. It doesn't look pretty, but sure did taste good over some homemade mashed taters :)

Baked French Toast

Yum! Doesn't feed 12 people...I fed 7 with this recipe. After cutting up the one pound loaf of bread, I found it didn't all fit in one layer in my 13X9 baking dish, so I also used a 8X8 pan and just whipped up some more egg/milk/vanilla/sugar mixture. This was not soggy at all like others have said. The carmel sauce is a nice substitute for syrup. I made that the night before to, then just heated in the microwave the next morning and topped the toast. I also used a can of apple pie filling instead of peeling and cutting apples- worked very well. Will make again, thanks!

Rich Chocolate Frosting

This is sinfully delicious. It was very labor intensive...I used a handmixer, I don't have a Kitchenaide yet! I kept thinking my mixer was going to burn out. I added milk as I went. Topped a boxed cake mix and added raspberries. So good. Thanks

Toasted Pumpkin Seeds

Mine burned after 20 minutes in the oven? I soaked them overnight, dried them overnight, then baked as directed. They were smoking after 20 minutes. Some still ate them even though they were a little burned, and not very crunchy. Will try again next year...

Baked Potato Soup

Excellent. Doubled everything besides the basil. Took about an hour to make, not 30 minutes. Added some cornstarch whisked with water at the end to thicken a bit and mashed one of the 4 potatoes to add texture. Great flavor, we all enjoyed this with french bread. Thank you for the post.
