Best Mac'n'Cheese

Reviewed: Jan. 20, 2009
This is the best Mac & Cheese I've ever eaten. It is also probably the most expensive.

Alaska Salmon Bake with Pecan Crunch Coating

Reviewed: Jan. 18, 2009
This will be one of my go-to recipes when we have company. It is elegant, delicious, and super easy to prepare. I also prepared the honey-mustard-butter mixture an hour ahead and let the filets soak in it. Also, I might take another reviewer's advice and increase the pecans while decreasing the breadcrumbs slightly in the crust mixture to make it a bit more crunchy. But you can't beat this dish. I served it with brussel sprouts roasted in Meyer's lemon-infused olive oil and the "Garlic Mashed Red Potatoes" also from this site. To die for...

Grilled Fish Tacos with Chipotle-Lime Dressing

Reviewed: Jan. 18, 2009
So far, I have only partially made this recipe, but I absolutely loved it. I had the fish marinating (I used red snapper instead of tilapia) then during the day, some friends called and invited us to a BBQ...they already had a ton of food, so I decided to just bring the marinaded filets to toss on the grill and eat as-is. They were so flavorful after 6 hrs. of soaking! Can't wait to try the whole taco w/ the chipotle cream.

Quick Quiche

Reviewed: Jan. 17, 2009
This was a very good recipe to build on. I agree with the post that said they left out the butter. I thought it was a little greasy and next time I make this I would definitely leave that out. But I used ham instead of bacon and added mushrooms. Thanks for the recipe! I'll definitely make this again!

Really good- I bake them for about 10-12 minutes since I like them crunchy. Sometimes I add chocolate chips or hersheys kisses on top.

In Greece they used to make Easter eggs this way before there was dye! They use only red onion skins to produce a gorgeous, deep hue. Try it!!!!!!!

Chicken Florentine Casserole

Reviewed: Jan. 7, 2009
This dish was delicious; very rich. I followed one reviewers advice and sauteed the mushrooms & spinach in butter, and I added a bit of garlic powder, too. Will probably make for company, soon. It is very rich, though, so pair with steamed veggies or something else light.

Baked Teriyaki Chicken

Reviewed: Jan. 5, 2009
Wow. What great chicken. My entire family loved it, including my picky eaters (ages 6 & 9). I used skinless, boneless breasts and cooked it at 375 for about 45 minutes (which was too long). I used the lower temperature because I was also cooking rice and it required that temperature. We loved the sauce over the rice too.

Very Easy Shrimp Dip

Reviewed: Jan. 3, 2009
The idea is wonderful. I just didn't have enough cream cheese. We had only 2/3's of a block left after having bagels. I used what I had, and added some sour cream to make it stretch. Got a little runny with the sour cream. I discovered it is really good as a spread on rye toast. Thanks!

White Bean Dip with Pine Nuts

Reviewed: Jan. 3, 2009
We are garlic wimps! The two cloves that I put into the dip, were over-whelming. I had to do something to mellow it out. I baked the dip in the oven for about 45 minutes. It helped some. Then I added some parmesan cheese to it. We ate it all! My husband complained about the garlic burping back on him, but I was fine. Love how easy it was to make, though. Maybe garlic wimps like us, need to just use garlic salt instead?? Thanks.

Applesauce Pork Loin

Everyone loved it. It was moist. I didn't use the rosemary sprigs because I thought my kids (ages 6 & 9) wouldn't like it. My youngest did notice the pepper - I will use less next time.

Overnight Caramel French Toast

Reviewed: Jan. 1, 2009
We wanted caramel apple french toast, so I used this recipe and added a can of apple pie filling on top of the caramel sauce. The caramel flavor was masked a bit by the apples. It was enjoyed thoroughly by adults and slightly less by the children (ages 6 & 9).

Oatmeal Chocolate Chip Muffins

Reviewed: Jan. 1, 2009
super delicious. subbed almonds for the pecans- chocolate and almonds are a favorite flavor combo in my family, and applesauce for the oil. also used old fashioned oats- those are all i buy and they can be interchanged with quick cooking oats in any recipe. excellent results. highly recommend this muffin! also, i noticed that a couple people complained that they didn't rise very well. the problem is your baking powder. it is expired. toss it and buy a new can.

LuvAnn's Guacamole

Reviewed: Jan. 1, 2009
Reduce all ingredients except the lime juice, the cilantro (you could even add a little extra cilantro) and, of course, keep the amount of avocado the same. In my opinion, it would have been way too salty and filled with other stuff aside from avocado to have the texture and taste I like. I added 1/8 tsp. ground cumin at the same time as the salt. I also toss one minced clove of garlic in with the tomatoes, onion, etc.
