Spicy Refrigerator Dill Pickles

Great pickles! Extra crunchy! I cut the sugar in half and doubled the salt (course pickling salt). Everyone loved these!

Zucchini Cobbler

Delicious way to use up the abundance of zucchini that comes along every summer! Anyone who doesn't like this recipe probably didn't make it right. I've made it every week since the zucchini was ready and it never lasts more than a day at my house. I usually add about 2 cups more zucchini to make the filling thicker (and to use more zucchini) and add a little more spice than called for.

Easy Fruit Cobbler

Great simple recipe. Only took about 5 minutes to prep. Next time I make it I will spread the fruit out more, piling it in the middle means the edge pieces don't get a lot of fruit and the center pieces are nothing but fruit. Also, I think brown sugar would make it just a little more delicious!

Zucchini Bread III

Very good, although I made them into muffins and they got very stuck on the paper cups I used....maybe b/c I used 2/3 cup applesauce and only 1 cup oil? Not sure, but they were still yummy.

Crisp Pickled Green Beans

Excellent! Just enough heat and very crunchy! This recipe also works well with other veggies too- cauliflower, carrots, cabbage, bell peppers, or a mixture of whatever you like.

Blueberry Buckle

I honestly had never heard of a Blueberry Buckle before, but I am glad I know now! It is a delicious cross between a muffin and coffee cake, full of fresh blueberries and a great crumbly top. Follwed this recipe to a "T." My only complaint is that the cake itself was not too packed with flavor, maybe I will add some vanilla or almond next time. And trust me, there will be an next time, soooo good!

This was absolutely gorgeous. I was wondering if it might need vanilla, but it totally did not. Wonderful as is! (I used goat milk b/c I am allergic to cow milk -- that's the only thing I did differently. I'm sure cow milk would be just as good.)

Dark Chocolate Bacon Cupcakes

WOW!!! So delicious!! I made them late last night and ate 2 right away (my fiance ate FOUR! I couldn't stop him!), I just sampled a small bite of one this morning to see how the flavor had fused together, and they're even better than before! Truly decadent and delicious. I felt that they definitely needed the extra chocolately/sugary kick of chocolate frosting, so I topped them with the "Creamy Chocolate Frosting" recipe also from this site....thank you Milwaukee Cupcake Queen!!

Pepper-Honey Cedar Plank Salmon

I did it both ways, on the grill for my sister and I then in the oven when my fiance got home from work...the grill was a little more flavorful. Also, I like my salmon more of a medium well to well temperature so I left it on a few extra minutes. I will be using this recipe many more times in the future....thank you!!!

Slow Cooker Chicken and Dumplings

This was so easy to make. I've made it with homemade drop biscuits and the refrig biscuits and we like both. I've also used one can of chicken and a different cream soup. We've liked all the variants. We did find 2 cans to be a lot of dumplings.

Green Tomato Cake

I had such an over abundance of green tomatoes at the end of last year, I was trying to find something I could make out of them. This was an excellent choice! It was a perfect coffee cake and honestly, when l I told people what was in it, they hardly believed me!!!

Buttermilk Pie

Excellent (and super easy) pie! Kind of a cross between a pumpkin pie and a blondie. I used half white sugar and half dark brown sugar to give it a more carmelized flavor.

I think this could be better if either white potatoes weren't used. They were dry and tasteless. The sweets were nearly overcooked. Perhaps try this without cooking anything else in the oven. Flavors melded nicely in the frig.

Easy and Elegant Pork Tenderloin

Yum, yum, yum. Everyone loved this recipe, including my picky eater. The picky eater did remove the breading though. I had a bit of trouble with the breading sticking, my pork roast was probably too damp. It didn't reheat the best (in the micro), so I think I'd try to make a smaller roast next time or divide my roast in half before cooking. (I had about a 3# roast and it made enough for 3 meals for my family of 4.)

Roasted Vegetables

Our favored veggies were the red peppers, then the onions. We had a couple problems with this recipe. The Yukon gold potatoes were very dry and not tasty; some of the sweet potatoes were overdone and mushy. I swapped carrots for the squash (only I barely like squash) and they were cooked perfectly. I also added a few leftover mushrooms for the last 10 minutes and they were excellent. I will say that as I've been reheating the veggies, I really believe the flavors of this recipe are a '5'. The Yukon Golds tho still don't seem to have a lot of flavor. I had huge Yukons, so maybe that was part of the problem.

Armenian Pizzas (Lahmahjoon)

This was a delicious dish, but only after I made it on pitta bread. The first night I made it using homemade pizza dough; I don't recommend this b/c by the time the crust was done cooking (on a baking stone, no less), the topping was too dried out. I wasn't very happy! Thankfully, I had leftover topping, so the next day I made it on shop bought pitta bread. I also spread the topping on a bit more generously. The result was tasty and fabulous! Recommended. Note that I did not use fenugreek, feta or lime. I did add more chopped fresh mint and actually added it to the topping while cooking.
