Good Old Fashioned Pancakes

Grest base recipe first time I made it. Second time I added 1/2 tsp real vanilla extract, 1/8 tsp. almond extract and 1/4 tsp freshly grated cinnamon. Freakin' awesome!!! Made it 4 days in a row due to requests when family was in town.

Italian Chicken with Garlic and Lemon

Reviewed: Feb. 11, 2008
I love this recipe! I use boneless, skinless chicken breasts cut in half that I marinade in the sauce combo (Minus the oil) before baking. As other reviewers have said it is best to pile the potatoes on top so they don't get soggy. I also use baby red potatoes with this, their bitterness paired with the vinegar really works for me. The only reason I gave it four stars is because my husband complains about the vinegar smell EVERY time I make this. He thinks something electrical is burning.

Chicken Vicious

Reviewed: Feb. 10, 2008
I have been meaning to make this recipe for a long time, and I am so glad I finally did! Don't let the "Vicious" scare you, this recipe is fabulous! I did modify it just slightly for personal tastes, as we all should, but only minimally: 1/2 Tbsp red pepper flakes, and only 1 cup white vinegar. The vinegar/soy sauce combo is outstanding! The sugar does a great job of sweetening the sauce as well. My husband doesn't like peas and so, to add some crunch with the chicken and mushrooms, I added sliced celery instead. Superb! I think next time I will use more chicken, we both were left wanting more after the meat was gone!

Blueberry Crumb Bars

Reviewed: Jan. 3, 2008
Made exactaly as is except used frozen (I picked them fresh this past summer) blueberries. Really good and not too many ingriedents. I did have to keep it in the fridge because the berries oozed out when cut warm. Maybe next time I'll sprinkle the cornstarch on the crust layer, before I add the blueberries. Will make again! :)

I feel that is too unhealthy, but my husband, sister and brother request it all the time. I think it's more of a comfort food or a side dish, not a main-course

American Lasagna

I made it as-is and loved it. Hubby did not. We figured out it was the ricotta cheese, so I halved the amount and replaced it with mozzerella. Plus I have to puree the tomatoes so there are no chunks, but he loved it the second time!

Scott Hibb's Amazing Whisky Grilled Baby Back Ribs

Reviewed: Sep. 3, 2007
Absolutely perfect! I was a little concerned about the pre-seasoning; that it wouldn't have enough flavor, but everything turned out perfect in the end. I did simmer the sauce on low the entire time the ribs were cooking and it thickened up quite nicely. No changes were made at all. Good Job!
