Aaahh! Potato Soup

I doubled the batch and enjoyed with rolls and a few leftover biscuits. The hubby took the remainder to work for 4 lunches! He really loved it. I used scalloped potato mix as the au gratin was sold out and it worked wonderfully. I will make this again on my scheduled soup day. I love this recipe.

Mrs. Sigg's Snickerdoodles

These really are amazing. I perfer chewy so these save everyones' preferences just wonderfully! I had to make the cookie balls a wee bit smaller than normal so I ended up with WAYYYYY more cookies than the recipe states but, that's ok - being a friday with 16 hungry preschoolers, I am certain they will not mind in the least!

White Sloppy Joes

We made this and after omitting the liquid smoke, enjoyed on top of grilled buns open-faced. We had alongside of fries, beans and green salad. Very good. Excellent way to make a simple meal. Will make again, the whole family really enjoyed.

Chicken Satay

This was terrific - I used chicken thighs and had excellent results. Since I made this twice, the second time I cooked the chicken, marinade and all with a little veg oil in a pan, covered for 6minutes and had, again, terrific results. Served with chickpea curry, naan and rice with date-raisin chutney.

Naan

I tried this recipe to go with some Indian food I was making for dinner. I don't have a grill pan and the broiler was not available to use. The dough rose fine and all but the finished product was so thick! I rolled the piece out very thin and they still became thick and big(long) but it was good. I didn't use the garlic in the recipe and forgot the butter. Everything turned out great and the family loved them.

Savory Crab Stuffed Mushrooms

I made these as part of a main course for dinner about a week ago. I put them over basil pesto angelhair pasta, they were a huge success. Very good, I added a lot of parm to the final presentation but we are total cheeseheads at my house. The extra was eaten the next day for lunch and kept really well over night in a plastic container. I can't add anything to this recipe. It's really good the way it is.

Chicken Enchiladas V

Potato Pancakes I

My first time making potato pancakes - this was a great and simple recipe. Cooked in bacon grease as well - the flavor was outstanding! I will, however, use my Kitchen Aid shredder to shred the potatoes and onion in the future. We had with sour cream and salt and was great also tried the maple syrup on them and they were really good. I really enjoy those recipes that seem to have more of an 'old time' feel to them - I can see someone making these while in the bush at an old mining camp.

Potato Pancakes II

Perhaps the recipe should call for using 'plain' mashed potatoes rather than the ones I make for dinner. These were terribly runny and I had to add a lot of spices to flavor it up. On the brighter side though, my husband loved the crispy cheese that melted and cooked on the outside of the cake. It did make a nice crust. I might try this again just to see if I can redeem this recipe. But only my husband ate them.

Jam Filled Butter Cookies

Ok - two parts to this cookie; first, I made a batch and had a terrible time with the dough. It was very crumbly and didn't stick together at all - I added a little water and that solved that problem. Then the choice of jam for the cookie filler was terrible...once baked, it tasted like old communion wine. It ran all over the cookie sheet. Secondly; the recipe made enough to refrigerate so I tried again the net day with a different kind of jam. This turned out well. The cookies were dry and not sweet but the strawberry sat much better with this lighter cookie than the original blackberry I had used. I recommend for tea and milk and coffee.

Cheddar Bay Biscuits
