Black Bean Spinach Pizza

Reviewed: May 2, 2009
Really good and different kind of pizza option. I made the Quick and Easy Pizza crust from this website for the dough and it was super easy. I also took the advice of another reviewer and buzzed 1/2 can of black beans, the onion, dried spices, cilantro and spinach together in the food processor. I didn't have any salsa but had leftover bottled roasted red pepper and threw that in the food processor as well. Salt to taste. Ooo-la-la, a new topping is created. I added the rest of the black beans to the mixture, adding them unmashed for a little texture. I did brush my crust with olive oil prior to a prebake for about 5 minutes, as suggested by another reviewer. Added the black bean topping, the mix of cheeses. I have a hot oven so at 20 minutes the pizza was ready, but the bottom was still kind of pale. Only after I had made a bit of mess in the oven did I find out from another reviewer that if you bake the pizza on the lower third of your oven will your crust bake and brown before your toppings burn. I can't wait to make this pizza again and try baking it on the lower third of the oven! Thanks for a great recipe idea!

It was a pizza and cards kind of night so tried this recipe with the Black Bean Spinach Pizza recipe from this site. What a winner of a duo! We all really enjoyed the crust!

Strawnana Bread

Reviewed: Apr. 30, 2009
yummy! This was delish although I have to say that I did change it up a bit based on my own thoughts as well as other reviews. I replaced the oil with one stick of butter. I also omitted the orange zest, added a couple splashes of vanilla, and did one cup of white sugar and one cup of brown. I had read a couple reviews that said the bread was a bit dry so I decided to add a 1/2 cup of sour cream. Once the batter was in the pans I also sprinkled it with cinnamon and sugar so it would have a sweet crunchy top. Perfect! Thanks for the recipe!

Guacamole

Excellent recipe. The most important thing is to make sure you get good, ripe avocadoes (which is especially difficult for us in the Midwest). If you do that, this recipe comes out perfectly.

Mango Cardamom Bread Pudding

Reviewed: Apr. 23, 2009
I had some Marzipan Stollen (from Christmas) in the freezer that needed to be used. I dried the slices for 2 days and diced the bread up small. I soaked the bread in the custard for about 30 minutes. I thought it needed just a little sauce so I whipped together a coconut sauce: 1 cup coconut milk (light works just fine), 1 T. white sugar, or more to taste, 1 T. cornstarch, 1/8 - 1/4 tsp. coconut extract and 1/2 - 1 T. shredded unsweetened coconut. Put 3/4 cup of coconut milk and sugar into a medium pot and heat until just simmering. Mix the cornstarch into the remaining 1/4 cup coconut milk and whisk till smooth. Add mixture to simmering milk and stir constantly until thickened. Remove from the heat, add the coconut extract and coconut. To serve I sliced the bread pudding and served the coconut sauce on the side. I actually think the bread pudding tasted better on the second day, but maybe it was because I had it with the coconut sauce on the second day and plain on the first day. At any rate, I liked this recipe. For someone who likes their dessert not so sweet and delightfully fruity, you should try this recipe.

Bacon Gravy for Biscuits

Reviewed: Apr. 20, 2009
As is, the recipe is bland and way too thick. Many of the suggestions below hold true for any good gravy, particularly about having the same numbers for your proportions: your drippings and flour should be exactly the same amount, so as to make a proper roux, and the milk should be incorporated slowly, in small batches. Remember too that you should shoot for a consistency slightly thinner than what you want your end result to be, as it will thicken a bit on standing.

Beer Dip I

Reviewed: Apr. 19, 2009
This is a great dip that's very flexible and can go with a lot of different food items. I personally like to make it with Guiness and eat it with tortilla chips, but when I make it for others, I usually use Amber Bock or Blue Moon and serve it with some medium-thick pretzels. It is a little bit hard after refrigeration, but it's perfect once it's softened at room temperature for a few minutes.

Creamy Lemon Pie

Reviewed: Apr. 12, 2009
I made this for Easter dessert, and it was very well-received. I piped whipped cream on the top, and there are only a couple of pieces left! My husband thinks it could have a stronger lemon flavor though - maybe I'll add more juice next time. It was super easy though - I made it Saturday morning and then we ate it Sunday afternoon.

This is a wonderful recipe to build upon! I added salt, pepper, red pepper flakes, garlic powder, oregano and thyme, as there were no seasonings given...turned out great. I also substituted fat free sour cream for the milk, which worked great. Definitely a must in the dinner line-up!

Delicious! Oh my gosh, we keep snitching from the pan just like we do with "real" brownies, but these are so much healthier! I made the recipe exactly as written - except that I probably added more than 1/2 cup of chocolate chips. Fabulous!

Oh wow, these are good. I've made them twice so far, and they turned out better when I used the KitchenAid to mix/knead the dough and when I made the dough the night before. I frost them with cream cheese frosting, and they disappear in no time flat!!

Potato Soup with Spinach Dumplings

Reviewed: Mar. 29, 2009
I subbed about a cup of white wine for a cup of the broth, just to brighten up the flavor a bit. In all, this is one of the best soups I've had. The bread dumplings are an excellent alternative to the labor of making pasta dumplings, and the vegetables work incredibly well together.
