Coconut Pumpkin Nut Bread

Very Moist! I scaled the recipe to 10 servings and used 2 mini loaf pans. I subbed canola oil in place of vegetable oil. Also, I had to use sweeten coconut so I cut the sugars in half. Baked 35 mins. @ 325.

White Pizza Dip

My kids scarfed this down!!! I didn't have enough ricotta, so I used half ricotta and half french onion dip. I added chopped pepperoni "after" (because of the grease) removing from the oven. Only used 1 teaspoon of the dry packet seasoning. Although the dip didn't look too appetizing, I will make again.

Feta Chicken

I didn't have flavored feta cheese, so I mixed regular feta with sun dried tomato pesto. This added even more flavor. I drizzled melted butter over the chicken 10 minutes before removing from the oven. Try to keep all of your chicken breasts the same size so as not to overcook. Next time I will cover with foil for the first 15-20 minutes.

Grilled Beef Gyros

This Was AMAZING!!!!! The cucumber sause is a little too garlicy... But it was amazing! We used this recipe in our college food management lab. The meat we used was, get this, DELI ROAST BEEF.. It was sliced thicker! This recipe is just plain great!

Spicy Grilled Shrimp

This is a quick and delicious marinade that my family really likes! I have made this several times and it's great to throw together in a few minutes before grilling. My only change was to cut back on the cayenne because of the kids.

Early Morning Oven Roasted New Potatoes

With a small amount of butter and EVOO, I sauteed garlic with the potatoes in the pan before baking in the oven. These were crispy and a bit dry (may have been cooked too long). So I decided to use the same pan with drippings and saute some frozen peppers and onions in butter and added to the potatoes. Make sure you try and cut your potatoes all the same size.

Vinegar Grilled Chicken

I was quite pleased with how moist this chicken turned out! I subbed 4 skinless, boneless chicken breasts because that is what I had on hand. Served on a bed of onions, sauteed red, yellow and green peppers.

Tomato, Basil, and Feta Salad

A great way to use my garden veggies and herbs! I used sweet baby cherry tomatoes instead of romas. I also removed the seeds from the cucumber, sprinkled the two halves with salt and turned upside down to drain for a few minutes before slicing. A nice summer salad.

Citrus Lemonade

A light, fresh tasting lemonade. I followed the recipe as stated. However, I felt the limes overpowered it. It did not have a sweet or tart taste. Next time I will only use 2 limes, plus add 2 more lemons. Instead of juicing all of the fruit, I sliced them in 1/4" - 1/2" slices and removed the seed pieces. I placed the sliced fruit in a bowl and added the sugar. I mashed slightly with a potato masher and let sit for 1 hour before adding the water and ice. This makes for a nicer presentation.

Average. The canned tomato soup was overpowering. My family kept asking what *is* that taste. I used 1 1/2 cups of water and 1 tsp. of cumin. I did not have 2 lbs of ground beef, so I used 1 lb. ground beef, 1/2 lb ground turkey and 1/2 lb. ground sausage. Make sure you *drain* the ground beef (I always do) *before* adding seasoning mix and putting in the crockpot or it will be runny and greasy. My family ate this but ask me to go back to making chili with *beer instead of tomato soup!*

Walnut Biscotti

Taste good, but was very crumbly. I thought they tasted better the next day after being in an air tight container. I halved the recipe and only used almond and pure vanilla extract. Made 1 12" rope (didn't like the mini size). I used a SILPAT to bake on but the bottoms still got to brown for me. Decided to use the rest of dough and formed a larger loaf. Baked 10 minutes longer. I melted white and dark chocolate to garnish/drizzle.

Zesty Slow Cooker Chicken Barbecue

So good! I scaled the recipe back to 3 servings and used thawed chicken breasts. Cut back on the sugar and used Al's BBQ sauce (recipe from this site). Cooked on high for 3 hours, then shredded and topped on a baked potato! This would be delicious in a wrap.

Buckeye Cookies III

This is one of those recipes we seem to only make for Christmas. My son said he loved these so I made them for a snack for an after school snack! I scaled the recipe back to 9 servings and easily got 18-20 1" sized balls. I also put them in the freezer for 5 minutes before coating. Used a melting candy chocolate to cover instead of using shortening and semi-sweet chocolate. To give a different twist I dipped some in a white chocolate candy coating on one side, stuck in the fridge for a few minutes, then covered the other side with the chocolate. Family LOVED the new twist!

Cajun Shrimp Orecchiette

My family really liked this recipe. I could not find the pasta listed in the recipe so I subbed with tri-color fiori. I added a splash of EVOO, minced vidalia in place of shallots, and added about 1/4 cup freshly grated asiago and parmesan cheese just before serving. I'm not a seafood fan, so I saved a small amount of pasta and tossed with grilled chicken.
