Fantastic Black Bean Chili

Reviewed: Jul. 13, 2008
I love this chili. It tastes best when you make it the night before or early in the day and reheat for dinner. I use the tomatoes with chilis for extra flavor. The first time I didn't and it needed something. I also add diced red pepper.

New Years Black-Eyed Peas

Reviewed: Jul. 13, 2008
Actually made this last week just for something different-turned out pretty good! I used a chuck of leftover ham instead of the jowl but that was the only change. Will try adding cabbage next time.

tasted really good but was really way too thin for my liking. But good for an emergency.

White Chili with Chicken

Reviewed: Mar. 15, 2008
pretty good! I started with dried beans instead of canned-that was about the only change i made except that to thicken, I pureed aprox 1/2 cup of the beans towards the end of the cooking time instead of using the cornstarch. Stirred the pureed beans into the chili & let simmer about another 20 minutes & was perfect thickness for us.Easy to adjust the seasonings for personal preference.

Sour Cream Scalloped Potatoes

Reviewed: Feb. 24, 2008
i made this using ore ida brand o'brien potatoes (with onions & green peppers already in there). It was awesome! Didn't have to chop onions & we both like green pepper so worked great! Topped w/a little extra cheese at the last minute. Terrific leftover too!

Italian Wedding Soup I

Reviewed: Feb. 21, 2008
This recipe is really nice, you can make any kind of adjustments. I used pork sausage in my meatball mixture and used a little more garlic and bread crumbs. I also boiled the orzo separately with salted water, then rinsed with cold water to stop the cooking process. I added the orzo 5 minutes before serving and I did not loose any of the broth and it was even better the next day! Enjoy!

Chicken Tortilla Soup I

Reviewed: Feb. 21, 2008
I followed the tips from the readers review and used chickpeas instead of hominy. (Cumin instead of oregano) To make more broth I just boiled the bones of the chicken quarters and added it to the end and just added more seasonings if needed. I also added corn - Delicious!!! A big hit from my family and church friends!

My grandmother makes this regularly and it has been a staple in our family for many many years! This recipe is the same one my Grandma uses and it is absolutely delicious! I now make it for my own boys and they request it often. A definite keeper.
