About me:
I loved to cook with my Grandmother and my Mother any chance they would let me. I would experiment in the kitchen when left on my own as early as 7 years old (what a mess). I took cooking and chef's courses in school from 6th grade to my Senior year. Unfortunatly I was unable to attend culinary school due to the fact that I'm colorblind. It wasn't addressed early on because noone knew it was a problem...oh well, everyone in my life LOVES it when I cook, so I've decided to expand my knowledge and share my recipies at this site. Alton Brown is a friend of mine, (I only see him twice a year) who has shown me how to overcome any obsticales I may face in the culinary world. My favorite accomplishment was when I learned how to never again have dry meat.

Beef Enchiladas II

Great recipe! Quick & easy! I did use canned enchilada sauce & mixed a bit in with the cooked ground beef to moisten. Also added a bit of chili powder to the meat mixtu

BBQ Sauce for Cheaters

not bad! i used bullseye bbq sauce. also added a touch of crushed red pepper & purreed the tomatoes for a smoother sauce.

White Chili with Chicken

pretty good! I started with dried beans instead of canned-that was about the only change i made except that to thicken, I pureed aprox 1/2 cup of the beans towards the end of the cooking time instead of using the cornstarch. Stirred the pureed beans into the chili & let simmer about another 20 minutes & was perfect thickness for us.Easy to adjust the seasonings for personal preference.
