Malibu™-Bailey's Colada

Good, but not sure that I like the Irish cream in this drink. I added more pineapple juice and cream of coconut to my glass to cut the taste of the Irish cream . . . and I like Irish cream, but not in a pina colada! I also think this should be mixed altogether in the blender so that it's all cold and the crushed ice melts more than it does with just half a cup of the mix. Not sure that this is my ultimate pina colada recipe.

Cream Cheese Cookies IV

Pretty good little cookie. I used 2 t. vanilla extract and may use a little more the next time. Used a regular yellow cake mix. Wonder how these would taste with a French Vanilla cake mix? Used a generous teaspoon and rolled into a ball instead of dropping. Chilling the batter makes it much easier to handle and 30 mins is not long enough. I rolled the balls in raw sugar crystals prior to placing on cookie sheet. I greased the cookie sheets as instructed, but I'm not sure that you need to do this. This is a keeper!

Surprise Banana Cake

This didn't live up to my expectations. Was pretty dry. I made alot of the modifications suggested by others. Used half white and half brown sugar. Added extra tsp of baking soda. Used cake flour. Added 1 1/2 t. cinnamon and 1/2 t. nutmeg. Baked at 350 in a 9" pan for 35 mins. Sprinkled powdered sugar on top. Good flavor, but not moist. Would rather have had regular banana bread . . . regular banana cake. Anything that last 3 1/2 days in my house isn't worthy of being a keeper.

Easy Chocolate Fudge Cake

Not the prettiest cake in the world, but it won't last 24 hours!! I used a devil's food cake mix. Made fudge sauce per instructions. Poked as many holes as possible in the top of the 9 x 13 cake. Before baking the cake, with a spoon, gently pull batter into the corners of the pan. Someone taught me this years ago. It will help your 9 x 13 (or 9 x 9, etc.) cakes to have a more level shape. I served this cake with Cool Whip and it was great. But, I had visions of this cake warm with vanilla ice cream! There's so much syrup that it will gather under the cake. Be sure to use a spatula when serving so that you can scoop some of the extra syrup onto each piece of cake. Yum! Yum!

Too Much Chocolate Cake

I'm not a huge chocolate lover, but this is an awesome recipe. I'm not even really sure how anyone's cake couldn't come out, even with varying the recipe a bit. I used a cake mix that was only 15oz, compared to the 18.25oz called for. I used sugar free pudding mix and didn't use the full 5.9oz that was called for. I used a bit less than 1C of sour cream and my cake STILL came out perfect! I also used the satiny chocolate glaze recipe found on this site, paired w/fresh strawberries. I did use larger choco-chips, but chopped them in my chopper to spread the chocolatey-goodness. This is my new go-to dessert, and I'll be trying this recipe w/ different mixes and pudding combos. Next up: strawberry cake, banana cream pudding and white chocolate chips.

Carrot Apple Salad

Very good and easy. Used pineapple tibits instead of crushed. Used a 6-oz container of low-carb (Kroger brand) vanilla yogurt instead of half vanilla and half plain. Used Fuji apples and didn't peel. This is a keeper!

Mexican Casserole

Good, will make again. Used refried beans. Added about 1/2 T more chili powder and small can green chiles. Didn't have corn tortillas, used whole grain instead. Next time, going to try using tortilla chips. Put half the cheese on top of the first layer of meat. Added a few drops of hot sauce (Chalulu's).

Broccoli Chicken Divan

Very good. Read some of the reviews & used some of the suggestions. Used frzn broccoli florets instd of fresh, cooked. Used cr of chicken soup. Dash of seasoned salt, 1/2 tsp garlic pwdr, 1/3 c dry onions, dash lemon pepper, added 1/2 c cheddar cheese & 1/2 sour cream to soup. Mixed everything together. Used 1 c cheese on top. Used 3-4 T cornbread stuffing, crushed fine, in 1 T butter. Will make again!

My Country Style Steak

Good, but would have been too salty if I had added salt. Next time, I'll use only half the onion soup mix and add some dried onion. I used 1 cup water and 1 cup milk. Next time, I'll use 1/2 cup milk and 1/2 cup cream. This is a keeper!

Chicken Crunch

Very good, quick, and easy. Didn't have Ritz crackers. So, I cut butter down to 1/4 c. melted. Used approximately 1 1/2 c. cornbread stuffing and approx. 1/4 t. poultry seasoning. Mixed stuffing and seasoning with melted butter until evenly moistened. I also baked a little longer. About 40 minutes or until stuffing turned golden. Yummy!! Next time, I will mix chicken, soup, and sour cream together before putting in baking dish.
