Crab and Swiss Quiche

This was good! Took forever to set up though, I had to cook it for like an hour. Definately something different. It was good, but lacking that punch I would really like it to have.

Parmesan Asparagus

Yum. So simple, yet so good. I only did 10 minutes in the oven because I like mine super crunchy! Will DEFINATLY make this part of my rotation. We LOOOOVVVVEE fresh asparagus.

Lobster de Jonghe

Yum... This was great! I used imitation lobster meat that I put in a food processor for a second or two to dice up but it was FANTASTIC either way! We will definately make this again, it was definatly something different for dinner. But for those of you thinking about cutting back on the butter, really dont! I used a reduced fat Country Crock to help curb the calories, but the butter really makes the dish!

Pickle Rolls

Yum. My husband loved this. It was a very unique lunch. The only thing I changed was I used fat free sour cream and added a little bit of package ranch mix to punch up the flavor. This will be a normal for lunch rotation!

Crab Crusted Grouper

Great flavors! Unfortunately, I couldnt find Grouper so I used some fresh Mahi Mahi that I had in the fridge. Turned out GREAT. My husband ate his and half of mine! Will definately make again!

Lobster Bisque

Wow! I havent ever had a lobster bisque, let alone made one so this was a nice first try! I did add some pepper about 1/4 cup parmesean cheesse and did half crab half lobster (and all I had was imitation). It came out fantastic (even with the imitation). We served it with some baguettes and loved it! Thanks for the great recipe!

Pork Tenderloin alla Napoli

OH MY GOD! I doubled the sauce recipe, and put it over egg noodles just like others had suggested. I accidently put the creamn in it when I put it in the oven, it still turned out fantastic. This recipe is pretty much idiot proof if you follow it, and even turns out great when you dont read it correctly, like I did!

Spinach and Potato Frittata

The possibilities are ENDLESS! I opted to cut the potatoes up, put them in a large bowl, coat them in olive oil, season with salt, pepper, italian seasoning, garlic salt, and cayan pepper, roll them around a bit to coat and THEN cook them. I also put it in the oven to continue cooking the eggs. I topped with cheddar, mozerella, and feta cheeses and a bit more italian seasoning and fresh tomatoes. There are SOOO many things you can do with this recipe! Go to town!!!

Flip Flop Grilled Chicken

Wow. This was fantastic! I dont normally like peppers, but it really complimented the taste of the chicken. The only change I made to the recipe was I cut in in half, and also grilled the peppers on some foil and brushed it with the marinade mixture. This is definately going to go in the rotation!

Pork Chop and Feta Skillet

Definately loved these! Then again, anything with feta is fantastic! We made the recipe as-is and it had wonderful flavor. TIP: After removing the porkchops from the skillet, mix in about a tablespoon of water and a teaspoon of lemon juice to the skillet and stir around the drippings - heat to a boil... and then pour that into some already cooked white rice. It is a GREAT side dish with all the flavors of your pork chops.

Grilled Gyro Burgers

These are good! I make a whole big batch and freeze the patties individually so I can pull them out when I want them! I really enjoy these, but instead of ground beef, I use turkey (like with all my recipes). I also added some feta cheese to pita at the end. Yummy!

Eggplant -- Easy, Good and Tasty

Nice.. We loved this recipe. I did make some changes as suggested by others. The drudging in flour before putting in the egg mixture (to which I added garlic powder). And instead of baking, I actually fried it with some olive oil (due to time constraints). I took this to lunch with the inlaws and they loved it (even my sister in law liked it until we told her it was eggplant - she is stupid like that). We will definately make this one again!

Pesto Tuna Salad with Sun-Dried Tomatoes

Yum... I also used low fat stuff and dried tomatoes instead of oil packed. We served it on toast with tomato soup! It was REALLY good!!!! We actually make a large batch of this using an entire container of pesto and 5 cans of tuna - then freeze it and pull it out when we want it. This is a REGULAR in our house. This is that one recipe that we are so thankful for! Trying 100 recipes to get this one was well worth it!

Warm Crab Parmesan Dip

Wow! Changes: Doubled Crab, Added a can of chopped artichokes, used fat free sour cream - cream cheese and mayo. This helped curb the calories because we (me and my husband) DID eat the entire thing (by ourselves)!
