Breakfast Casserole III

This was very good! To save some time I used large unpeeled redskin potatoes and cut them into bite size pieces. I baked them in the oven for 10-15 minutes, and then followed the recipe from there.

Best Big, Fat, Chewy Chocolate Chip Cookie

This is absolutely the very best chocolate chip cookie recipe I have ever made. I will use this recipe from now on. I followed the recipe exactly the first time, but the next time I halved the chocolatre chips, because sometimes I like more cookie than chocolate. Either way they are delicious!

Juicy Roasted Chicken

My family has made a very similar roast chicken. We are Eastern European and, along with the celery stalk, we place a peeled whole onion in the cavity. Tried and true for at least 4 generations!

Peggy's Broccoli Casserole

Made exactly like the recipes states. I didn't like it at all - way too much "sauce" for such 20 oz. chopped brocolli. Giving 2* because hubby thought it was pretty good. I heated it back up the next night and used it as a topper for my baked potato. That wasn't too bad that way. I guess I prefer less sauce and more substance.

Downeast Maine Pumpkin Bread

Mmmm, mmmm! I followed the recipe to the letter, and oh my stars it is soo soo good! It kind of freaked me out to be using a whole cup of oil. Next time I will try as others have suggested and use some applesauce to replace some of the oil. But this is definately a perfect recipe without any changes! I made this in two 5x9 loaf pans and baked for about an hour. I also made a cream cheese frosting to spread on the slices. Heavenly!

Exquisite Pizza Sauce

This is a wonderful pizza sauce with lots of flavor! It will definately be our sauce of choice from now on. The only thing I did not add was anchovy paste, because I couldn't see ever needing it for anything else and I don't make pizza very often.

Stir-Fry Spinach Salad

DH and I both loved this recipe. Such a nice change from putting you stir-fry on rice and healthier too. I did use 2 pepper (red and green), added some sliced Vidalla Onion and a can of sliced Waterchestnuts. Delicious - It's a keeper.

Chicken Casserole Mississippi

WOW - What can I say - COMFORT FOOD PERSONIFIED!! Very good, but VERY fattening. What I would change next time: Omit the sour cream - not needed. Just do the crushed Ritz w/1/4 c.melted butter for the topping. Add 1/2 c. milk to the noodle mixture - makes it creamier. Add 1 can diced waterchestnuts - crunch would be good and possible 1 bag frozen chopped brocolli. I also added 2 cans of mushroom pieces. Fun recipe to experiement with. I'll make again.

Pumpkin Cookies V

Excellent Recipe. I too baked for 15 min. Also increased the cinnamon to 2 t. and added a SMALL pinch of nutmeg and a SMALL pinch of ground cloves. Otherwise, I followed the recipe exactly. Brought to work and got RAVE reviews. It's only 8:30 in the morning and 3 people have already asked for the recipe. Thanks again.

Charleston Breakfast Casserole

Pretty Good! Instead of croutons, I used Pepperidge Farms Country Style stuffing mix. I found that using this, I did not need to add any additional seasoning. On complaint is the bacon was way over done by being browned first and then in the oven for 40 minutes, but it was still tasty!

Kielbasa Skillet Stew

My husband really enjoyed this. It's a great recipe. I left out the carrots and green peppers, I didn't have any. I also didn't have italian seasoning or thyme, so I spiced it using oregano, parsley, celery flakes, chili powder, and some red pepper flakes. That worked out pretty well for me I think it had a real nice flavor. I also used a can of black beans and a can of great northern beans.

Beef 'n' Biscuit Bake

I liked this pretty well, my husband said it was ok. I would make it again because it is an easy and cheap meal. Next time I will chop up a whole onion and fry it up with the ground beef, and probably add a teaspoon or two of minced garlic. I didn't use canned biscuits, I hade Bisquick mix so I made some from that. When I added the biscuits, I cooked for a full 15 minutes, and the biscuits were perfectly done.

Connie's Zucchini 'Crab' Cakes

WONDERFUL!! What a great way to "use up" all of that Zucchini. I did modify a bit. Used 2-3/4 c. zucchini and put it in a dish cloth and "rung it out". Used 1-1/3 c. ITALIAN bread crumbs and instead of dredging in flour, I used PANKO bread crumbs. YUM-O You'll find PANKO in the oriental section of your grocery store. Fried in Canola. Served with cocktail sauce. DELICIOUS!!
