They are very dense muffins. I like healthy, but I also like soft.

Cabbage Beef Soup

Reviewed: Oct. 20, 2009
It was a lot like chili, but it was wonderful! I love the cabbage and the flavor is just right. I did add some cup up tomatoes, but it was just to use them up. I would add some next time, but it doesn't have to have them.

Creole Green Beans

Reviewed: Oct. 18, 2009
These were pretty good. Made to the recipe with the exception of the creole seasoning. I was ready to put it in when I found I didn't have any! So added some paprika, basil, oregano, thyme, garlic powder and some red pepper flakes. I used my frozen green beans which were a little watery as opposed to store green beans so I ended up cooking them a little longer. I think the butter is unneeded in this dish with all the bacon in it. Unless you use just a couple of Tbsp and saute the onions, peppers, and garlic first, then add the beans and bacon. The bacon also could be cut in half. Had a good flavor, wasn't too spicy for us. I will probably make again. Thanks for the recipe.

Romanian Apple Cake

Reviewed: Oct. 18, 2009
This was a nice apple cake, made to the recipe. My apples carry a lot of moisture, so needs a little more flour for me, otherwise it's too moist. I would have liked to see some more cinnamon in it. Good warmed up. Did powdered sugar glaze for the top, but it doesn't really need anything. Thanks for the recipe. 10/26/09~I have made this 3 times since this review, just a hint, I used about 4 cups of sliced apples as most apple cake/crisp recipes use this amount. Since varying apples are different sizes (mine are huge, I only use two for 4 cups) it helps to know how much instead of how many.

Apple Crisp II

Reviewed: Oct. 15, 2009
Made this to the recipe. Everyone raves about this one. The topping is fantastic! I am always looking to use up the apples off the tree this time of year. The added water was way too much for me. It may be the type of apple used. The filling part of the crisp is not bad. Needs more cinnamon and sugar for my apples. All in all, good recipe, I'll adjust and make again, thanks.

Spanish Rice II

Reviewed: Oct. 15, 2009
I used chicken broth to give some extra flavor to the rice. This is really good. Not a green pepper fan, but put some in along with some white and red that I had roasted previously. Was really spicy for me but the family loved it. Thanks!

Chicken-Flavored Rice Mix

Reviewed: Oct. 15, 2009
Made to the recipe. Was really easy, but really bland. I don't know what rice-a-roni tastes like, so can't compare it to that. Would definitely benefit from a little salt, garlic powder and cooked in chicken broth instead of water. Thanks for the mix though.

Made to the recipe these are just ok. A little bland even with the meatloaf seasoning pack. A little dry. Very quick and easy though. But I wouldn't make again.

Marinated Baked Pork Chops

Reviewed: Oct. 14, 2009
I thought it was a wonderful marinade. It gave the pork a lot of flavor. I put some onion and red bell pepper on top while I baked them and they were a wonderful compliment to the meat. I will also have to try it with chicken.

Hot Artichoke Spinach Dip

I also thought this was sort of bland. I used cream cheese and a little milk to thin it out. Added slat and pepper after it was finished. Salsa is also good with this dip.

Southwest Skillet

Reviewed: Oct. 5, 2009
Very good skillet recipe; will definately keep you warm on a cold Fall or Winter day! Will make again soon! The only changes I made is that I substituted ground cumin instead of using salt; I also didn't measure out the corn chips and cheese...I used about 3 handfulls of crushed corn chips, and a heaping handful of cheese. Everything else is the same.

I made this to the recipe. The mustard came through a little strong for me. The end product was also very dry. I much prefer the Sloppy Joes II recipe by Tamara. They are very similar so I don't know why this one was so dry. Thanks anyway.

Slow Cooker Apple Crisp

Reviewed: Oct. 4, 2009
Taste was excellent. Made to the recipe, once you get the components of the recipe together, this is very easy. Only cooked on high for 1 1/2 hours, then the hour for the top to harden. The cooking time for my apples from our backyard tree was still too long, they were more than done. The top never did 'harden' up, I don't see how it could get crispy in the crockpot. Oatmeal added to the top mixture would probably help. Still, it had a yummy flavor and this would be good done in the oven at far less time than the crockpot. The crockpot method has its place under certain circumstances I would think, but I will not make again this way, I will do in the oven, with this recipe. Thanks for the recipe!

Tangy Baked Apples

Reviewed: Oct. 1, 2009
Tried these just to see what it tasted like. Sauce tastes like warm sweetened cocktail sauce. I think it would be good if the apples were sliced with the sauce poured over and baked with a pork loin or chops. Just don't think I would make this again.

Grandma Johnson's Scones

Reviewed: Oct. 1, 2009
I made to the recipe, never having made scones before, wasn't sure what to expect. Once I got it pulled together to knead it worked out fine. I only cut 8 slices, should have done smaller ones, they really raise up and out in the pan. Took a little longer to cook for that reason. Good flavor and texture, I think they would make great shortcakes. Pretty yummy overall, next I will try some with choc chips or other fruits. Thanks for a great recipe!

Daddy's Whisker Soup

Reviewed: Sep. 28, 2009
Followed the recipe as written. Excellent potato soup. I thought the dill would overpower this, but it didn't, I added a little at a time just in case. I didn't read the reviews until I had already made this, so the whole tablespoon of pepper went in, then I thought it needed some more, so I added another 1/4 tsp or so, it was definitely peppery, which is fine, we like pepper. No extra pepper next time. Used the velveeta and it didn't overpower the soup as you might think. All in all, a nicely balanced creamy potato soup. Easy to make, no flour, no cream, no broth, not a lot of expense. I served with a nice asiago cheese bread, it was marvelous. Thanks Junebug's Mom!
