Chococonut Chip Cookies

Great recipe! Only change made is cut the white sugar to 1/2 cup as I used sweetened coconut like (as suggested by another reviewer). Also added walnuts. This recipe is definitely a keeper.

Corrigan's Minestrone

I made this last night for my family and was rather dissapointed. I followed the advise of those who had previously complained that it was too dry and added an extra can of vegetable stock. Firstly, the preperation of peeling, cutting and cleaning all vegetables was well over twenty minutes if you work alone (it took me almost 45 minutes). Secondly the soup was just bland. It did not have much flavor what-so-ever.

Banana Pancakes I

This is a very easy to make twist to ordinary pancakes. Only complaint is that the batter is somewhat thin, making pancakes difficult to flip. Other than that, it was delicious!

Sweet Potato Casserole I

Great recipe. Made for a pre-school holiday party, so omitted the pecans from the topping and adjusted the flour/sugar mixture to compensate. Added pumpkin pie spice to the sweet potato mixture and halved the sugar as recommended. Loved it!

Lasagna Roll Ups

My husband hates tofu and he enjoyed this lasagne. My kids devoured it. I didn't have frozen spinach ans used canned instead(one) - no problem. I accidentally put the entire jar of sauce into the mix - again, no problem; it didn't end up too "soupy".

Rolled Buttercream Fondant

I am just starting to get into baking and cooking as a new hobbie. I have been researching the use of fondant and came across this recipe. I made my first cake today using the fondant and it came out great (for my first time). My only complaint is that it was a little greasy and it was a little cracky. Can anyone tell me how to smooth it out and make it less greasy? Thanks!

Asparagus Quiche

My family loved this dish. It was very easy to prepare with ingredients that are easy to access. I subsituted whole milk for half and half to decrease fat and calories and added a small amount of onions for flavor. Will definitely make this dish again.

California Sherry Chicken

This was very flavorful, quick, easy and healthy! I took the advice of making more sauce but maybe I used the wrong kind of pan because I couldn't get it to reduce enough to used over the chicken. The only complaint my boys had was there was zuchini on the chicken, I made them eat it anyway. :-)

INCREADIBLE!!! Wonderful flavor and just an wonderful dish. Even my 9 year old liked and and asked when we would be having it again. Don't be affraid of the vinegar, it sweetens in the glaze and is almost good enough to eat alone!

Braised Balsamic Chicken

This was wonderful. I have impossible boys who don't like anything except what they are used to. I love variety and this recipe was a hit all around. I let everything simmer longer to thicken the sauce since other reviews had said it was too watery. Absoutely wonderful, the balsamic and the tomatos are a wonderful compliment to each other.
