Tangy Turkey and Swiss Sandwiches

Reviewed: Jun. 16, 2009
Delish. I used oregano instead of thyme (all I had), light mayo, and SmartBalance instead of butter. I used my panini press instead of the stove-top method with great results!

Catherine's Spicy Chicken Soup

Reviewed: Jun. 16, 2009
This is the best soup I've ever made! I doubled the seasonings (added some oregano too), used chicken broth instead of water + chicken bullion, and used light cream cheese instead of the sour cream. Also, I used one big can of "crushed tomatoes with added puree" instead of the tomato soup/diced tomatoes/whole tomatoes. This is an easy recipe and tastes SO GOOD!

One Bowl Chocolate Cake III

Reviewed: Jun. 13, 2009
Instead of cake, I made cupcakes! The recipe was easy and made tasty cupcakes, but they were too moist/wet. I would make this again, but just add less boiling water. Also, I followed the advice of another reviewer and increased the cocoa a bit.

Chocolate Chip Cookie Dough + Cupcake = The BEST Cupcake. Ever.

Reviewed: Jun. 13, 2009
This is a genius idea! I made the cupcake batter from scratch (one bowl chocolate cake from this site) and used refrigerated chocolate chip cookies. As stated by the submitter, it is vital to freeze the cookie dough and not to overbake!

Broccoli and Cheese Brunch Casserole

Reviewed: Jun. 12, 2009
Good but can definitely use some extra spices. I followed the recipe exactly except I replaced the pork sausage with chicken sausage and added some mushrooms. I would make this again, but I would definitely spice it up a bit.

Boston Cream Cheesecake

Reviewed: Jun. 12, 2009
Delicious even though I ended up making a couple of changes (didn't have all the ingredients). I used half the box of pineapple cake mix and used 2 packages cream cheese + 8 oz. ricotta. Despite these substitutions, this was still really really good! I will make this again except I will make sure I have all the ingredients on hand first:)

Mama Bear's Porridge

This is how I imagined porridge as a kid! The only thing I did differently was to use more oatmeal and add sugar-free maple syrup instead of honey. I will make this again!

Restaurant-Style Potato Salad

Reviewed: Jun. 5, 2009
Delish. I used left-over roasted red potatoes and left out the carrots, parsley, and celery. To make this more healthy, I used a combo of low-fat mayo and fat-free yogurt (once everything is mixed together, you can't even tell the difference!) and used a dash of sugar substitute instead of sugar. I would make this again.

Shiitake Angel Hair Pasta

I followed the recipe fairly closely except I added chicken and shrimp. It tasted bland, so I added basil and Italian seasonings to give some flavor. I would make this again.

Chewy Peanut Butter Brownies

Reviewed: Jun. 4, 2009
These brownies are good, except the peanut butter flavor isn't very pronounced. Had I not added chocolate chips, this would've tasted like a bland bar cookie. If I were to make this again, I would add much more peanut butter (and decrease the shortening accordingly). 25 minutes in the oven was perfect for me.

Raspberry Chocolate Supremes

Reviewed: Jun. 1, 2009
Easy, unique, and delicious. I didn't have white chocolate so I used semi-sweet. The chocolate-raspberry combo was great but I can't wait to try it with white chocolate. As for the crust, I used the crust from "Down Under Lemon Tart" (from this site) and it was perfect.

Fruit Pizza I

Reviewed: May 26, 2009
The first time I made this, I made the crust from scratch. The second time I made this I was extremely short on time so I just used refrigerated sugar cookie dough and I think it tasted just as good, if not better. Don't waste your time making the cookie crust from scratch. I do use powdered sugar in the topping and add some cool-whip. UPDATE: The next time I made this, I ran out of sugar cookie dough so I used chocolate chip cookie dough. That was out of this world delicious.

Green Beans With Walnuts

Easy and delicious. I used the olive oil (instead of walnut oil) to pan-fry walnuts and minced garlic and added them to the green beans at the end. I would make this again.

Black Magic Cake

Reviewed: May 23, 2009
Good but way too moist. I've made many chocolate cakes from scratch, but this one was almost falling apart from how moist it was. I will make this again because I liked it, but I will reduce the liquids. After baking, I filled the middle with strawberries and topped with fudge frosting.

Black Bean Vegetable Soup

Reviewed: May 17, 2009
Not the best soup I've ever made, but it was okay. Even after doubling the spices, I still felt like something was missing. I added fresh cilantro to each bowl and that made the soup a little better. Probably won't make again.

Janet's Rich Banana Bread

Reviewed: May 17, 2009
This is the BEST banana bread I have ever made (and I've been looking for a good recipe for years!). This will be my recipe from now on. I adjusted a few things to suit my family's taste. I used 1/4 cup butter, 1/4 cup unsweetend applesauce, 1/2 tsp. baking soda, 1/2 tsp. baking powder, added 1/4 cup more flour, a dash of cinnamon, and 1 cup mashed bananas. Result was a fluffy and moist banana bread!

Cheese Stuffed Mushroom Appetizer

Reviewed: May 17, 2009
No complaints here! I changed a few things to suit my family's taste. Instead of goat cheese, I used feta and subbed green onions for the white onion. I also used much less butter when sauteeing the caps. This is a recipe that I would make for company.

Strawberry Avocado Salad

Reviewed: May 17, 2009
this was excellent. As good as salads in high-end restaurants. The dressing is sweet, but really lovely. I used candied walnuts becase that is what I had in the house. pecans, regular walnuts, sliced almonds all would be excellent. Thank you for this impressive recipe.
