Dirt Cake I

SO GOOD for such simple ingredients. I layered the ingredients in a terra cotta pot, decorated with gummy worms, and used chocolate pudding instead of vanilla. I omitted the butter and sugar and it tasted perfect that way.

Darra's Famous Tuna Waldorf Salad Sandwich Filling

Delicious! I made this exactly as written except I doubled the walnuts and it was probably the best tuna salad I've ever had. UPDATE: I made this again but changed it a little bit because I wanted to use it as a filling for mini puff pastry shells. I omitted the celery and used pineapple instead of apple. My appetizer got rave reviews!

Black Bean and Couscous Salad

5 stars for being SO easy and quick yet still tasting gourmet. I left out the corn and bell pepper (didn't have any), used red onion instead of green (all I had), and used a bit more vinegar. Be sure to rinse the beans so that your couscous doesn't look gray!

Banana Muffins with a Crunch

I just wish I would've discovered this recipe earlier! I made a couple of changes based on reviews: cut butter down to 1.5 sticks and added 1 cup sour cream. Because I didn't have granola, I just cut up a couple of roasted almond granola bars to make 1 cup.

Greek Pasta Salad with Shrimp, Tomatoes, Zucchini, Peppers, and Feta

This recipe is so amazing that it should be kept a secret! I've never tasted a better pasta salad. The only thing I did differently was to double the shrimp, marinate it in Italian dressing, and then grill it. I also made this salad the day before (with the dressing mixed in) and let it sit in the fridge so that the flavors would develop.

Nacho Cheese Sauce

I wanted a cheese sauce similar to what you would buy in a can and this was it! The mixture didn't thicken enough for our tastes, so I dissolved some cornstarch in water, added it to the pan, and brought to a boil for great taste and consistancy!

Cut-Out Cookies in a Flower Pot

Very good. I used extra vanilla extract instead of the butter flavoring and made these into regular sugar cookies. We topped the cooled cookies with Decorator Frosting (from this site) and it was amazing!

Tuna Patties with Dill Sauce

Delicious! This is a nice change from boring dinners. I used 1/2 cup pureed carrots + 1/4 cup light mayo instead of the parsnips and used Italian bread crumbs. I doubled the black pepper and added 1/2 tsp garlic powder. Instead of dill sauce, I served this with a super easy tangy/spicy sauce (mix equal parts lemon juice with Tabasco sauce).

Tart Cherry Crisp

This is good but needs more sugar to balance out the tartness of the cherries. I also subbed tapioca instead of the flour b/c that always seems to work better. Will make again!

Perfect Cheesecake Everytime

Surprisingly really really good! This is a very simple and fluffy cheesecake. I used a ready-made crust and home-made cherry topping. For a twist, I spread melted chocolate on the crust before adding the cheesecake batter and everyone loved it!

Toffee Pie Bars

The only question is why isn't this recipe famous?? I can't believe it doesn't have hundreds of 5 star reviews! I lined my pan with foil, sprayed the foil, then layed the graham crackers down. I also simmered the toffee for 3 minutes as suggested. Because I had so much toffee left over, I made 2 layers: graham crackers, toffee, graham crackers, toffee, then pecans and chocolate.

I don't like giving bad reviews, but these cookies did not turn out for me at all (and I've been baking for years). I followed the directions exactly and the dough tasted amazing, but the result was super-hard cookies that were burnt on the bottom and gooey on top. There's no prob. with my oven because everything else turns out fine.

Nonna's Tuscan Salad Dressing

Any time I attempt to make home-made Italian dressing, it never turns out. However not only did this dressing turn out, it was perfect! I used 1/8 tsp. garlic powder and a combo of balsamic vinegar and apple cider vinegar. Tastes great on top of a Greek Salad!

Mama's Italian Wedding Soup

This.is.amazing. Seriously, try this soup! Like other reviewers, I added garlic powder and onion powder to the broth (used home-made). I also added brown rice instead of pasta. I think the secret is to let all the ingredients simmer together for a long time, at least 30 minutes--this way, the broth absorbs the flavor of the meatballs, even if they have been precooked.

Pizza On The Grill I

THIS.IS.TO.DIE.FOR. Seriously, this is one of the best things I've ever made. I still can't believe I made it myself! I used half whole-wheat flour in the dough and made 5 individual pizzas. I found it was easier to get the dough on the grill in 5 pieces rather than 1 big piece. (try roasting garlic and then spreading on the pizza instead of pizza sauce..it is heavenly).

Catherine's Spicy Chicken Soup

This is the best soup I've ever made! I doubled the seasonings (added some oregano too), used chicken broth instead of water + chicken bullion, and used light cream cheese instead of the sour cream. Also, I used one big can of "crushed tomatoes with added puree" instead of the tomato soup/diced tomatoes/whole tomatoes. This is an easy recipe and tastes SO GOOD!

One Bowl Chocolate Cake III

Instead of cake, I made cupcakes! The recipe was easy and made tasty cupcakes, but they were too moist/wet. I would make this again, but just add less boiling water. Also, I followed the advice of another reviewer and increased the cocoa a bit.
