Roasted Lemon Herb Chicken

Yum! Instead of a whole chicken, I used 2 pounds chickens pieces. I coated each piece with lots of herbs inside and outside the skin and used a little less oil. Quick and delicious.

Chocolate Chip Orange Zucchini Bread

Suprisingly good flavor combinations!! This has become a favorite at our house. I followed the recipe except I cut the oil down to 1/2 cup and it was still very moist. I also recommend straining the shredded zucchini of excess water before adding to the batter.

Banana Split Bars

I really liked the idea of banana split bars, but we thought that these bars weren't sweet enough to be dessert. I would make this again but add more sugar to the cream cheese mixture.

Old Fashioned Coconut Cream Pie

Even though I replaced half of the half and half with coconut milk, the taste of coconut wasn't really noticable. I will make this again using only coconut milk instead of half and half and see how it turns out. I took another reviewers advice and cooked this in the microwave with great results!

Brioche

I omitted the lemon peel and let the bread machine do the hard work. I made loaves instead of buns and after a couple of days, I made french toast with brioche slices. So good!

JELL-O® Chocolate Pudding Fudge

To be honest, I wasn't expecting great results from this recipe but I wanted to try it out of curiousity. One bite and I realized how wrong I was. This is delicious and has the exact consistancy of regular fudge. I used chococlate fudge pudding, replaced the water with milk, omitted the powdered sugar all together, and used a whisk instead of a spoon to get rid of any lumps. Can't wait to try it with white chocolate!

Creamy Twice-Baked Potatoes

Very nice! I was very skeptical after I tasted a little of the filling before they were baked. It just didnt taste that great and I figured it was a failure..but after cooking- they were amazing!!! I will be making these for special dinners. I love that these can be made and stuffed ahead of time, and then just pop them in the oven when you are preparing the rest if the meal.

Flan de Coco (Coconut Flan)

Even with replacing the evaporated milk with coconut milk, the taste of coconut was very subtle. However this recipe deserves 5 stars because this was the best flan I've ever tasted. I had never made flan before, so I followed other reviews and used a water bath and made sure not to over-cook the sugar.

Cheddar Pear Pie

Very good flavor. I omitted the crust and made cheddar pear crisp. I also added a dash of cloves, 3/4 tsp. minced ginger, and replaced the cornstarch with 1 tbs. tapioca. This recieved rave reviews from everyone who tried it!

Mozzarella and Tomato Appetizer Tray

It's amazing how delicious these taste for such little work. I omitted the red pepper, used fresh tomatoes and basil from my garden, and added a combo of vinegars to the dressing with great results. These taste good the day you make them but they taste heavenly the next day.

Barbequed Thai Style Chicken

I served this chicken over basmati rice at a dinner party and recieved rave reviews from everyone there! I followed the recipe as written except I used chicken tenderloins and baked the chicken at 350 degrees F instead of grilling. The fish sauce is key!!

Real Hummus

Awesome! Followed the tips by submitter RoyHobbs (great name) in his review, and it came out perfect. My young kids, who did not like my last attempt at homemade hummus, love this recipe. It tastes like a fresh version of a good prepackaged hummus.

Taste is pretty good but we felt it was a little bland as most of the cheese melted out of the chicken. Next time I will add fresh basil leaves to the filling because I imagine it would taste better.
