Sturdy Whipped Cream Frosting

I really liked this recipe for a frosting that wouldn't take away from the flavor of the cake too much or be too rich. I used powdered sugar instead of granulated, and added 3 Tbsp Saco cocoa when I added the sugar. This made for a delicious, creamy, fluffy, light frosting for the devils food cake, and I garnished with chocolate curls. I usually make homemade buttercream frosting (the real way) which takes forever and is very testy. This was fast but still melt-in-your mouth creamy. It also held up well. Mmmm.

Tater Tot Casserole

This recipie was quick easy and a HUGE HIT with the hubby! I added ketchup to the meat mixture and less milk and instead of cheddar cheese I used taco cheese. It was great!

Sirloin Tips and Mushrooms

Mall Pretzels

Delicious! Here's my substitutions - I didn't have bread flour, so used regular AP and just kneaded it longer in my stand mixer so it would produce more gluten, making them chewier. I use bread machine yeast, from a jar, so just use 2 tsp instead of the packet, and reduce the rise time by 1/2. Another reviewer said to use parchment paper...big mistake. I had to remove little bits of paper from the finished pretzels. The cooking spray the next time did the trick and they slid off smooth and easy. Oh, and the 2nd time I doubled the brown sugar, and liked the flavor even more. The almost-sweet & salty was irresistable. Thanks for a great recipe! Even my 14 yr old stepson wanted to help!

Mushroom Artichoke Sandwich

This recipe is a copycat of a great sandwich I used to get at Penn Station all the time. I got SO TIRED of paying 10 dollars for a (delicious!) sandwich and decided to learn to make it myself. The Penn Station version uses melted provolone instead of parmesan, which you are welcome to do, but the parmesan adds more flavor than the provolone without the added fat! Also, feel free to add mayo as you like. I think it has plenty of goodness without!

Potato Casserole I

This was sooooo good however I made some changes. I used frozen southern hash browns that I heated in the microwave until the chill was off of them. I also did not add chopped onion and added almost a whole small container of sour cream. I will make this again.

No Bake Cookies V

I made these EXACTLY as written and they got hard in the saucepan before I could even get them on the wax paper. I tried to pile it all into a 9x13 and smash them down while they were still hot in hopes of cutting them into bars, but that didn't work either. Don't know how everyone else had such good luck.

Pretty Chicken Marinade

My picky husband and hard-to-please autistic 5-year-old asked for seconds, so this will definitely be a keeper for us. I made it exactly as written except I left out the liquid smoke because I don't like that taste. Also juiced a lemon instead of using store bought lemon juice. Looks as good as it tastes.

Kentucky Bourbon Balls

I solve the melting problem by forming the balls, placing them on a cookie sheet lined with wax paper, and chilling them in the freezer for a few minutes before I dip them in the chocolate. There's really no way around it, though, you will have to work quickly in the chocolate and it takes a little practice before it gets easy.

Roasted Red Potato Salad

I've made this twice in the last week. The first time I did not like it it was to bland but we already committed to take it to another party. Both times I used 1/2 cup of mayo and 1/2 cup of sour cream like many of the other recipes suggested but what changed it to a five star the last time I used the correct amount of salt and then unbeknowsnt to me my husband who was helping put some salt on the potatoes before roasting and would put a few grinds in everytime he mixed it up. We are not big salt fans around our house that is why I only put a pinch in the first time but this recipe deffinetly needs the salt to work. I also put more bacon in both times I made the recipe but that was more of our own prefrence.

Spicy BBQ Chicken

We unfortunately didn't get to grill our chicken we ran out of propane. I didn't cut my onions up enough and they were big chunks in the sauce. All in all it was great, the sauce has quite a sit up and pay attention flavor to it but once you cook it with your chicken it it simmers down a little. My husband hates vinegar so I put probably about 2 tablespoons of cider vinager in and I really didn't miss it.

Cheeseburger Egg Rolls

This was a hit at my house, something rare with a 3 and 5 year old. I did change the filling a bit. I made half of it the way it was written and for the other half I used the meat, cooked and crumbled bacon, onion, bbq sauce and cheddar cheese. One pound of meat definitely is not enough to use all of the egg roll wrappers, but it easily fed my family. Like someone else suggested, I thought it wasn't enough oil, but I just let them cook on one side and then flipped them. It was less than 4-5 minutes on each side, but just watch them and you'll be fine. I'm definitely making these again.

Pancakes

We usually get bugs in our pancake mixes before we use it all up so I was looking for a recipe that had everthing I always have on hand. I've made this several times and have never had the problems of some people with them being flat. I think the key is to have fresh self rizing flour or baking powder and let them sit for a little bit before you use the batter to let the baking powder activiate. We love this recipe, infact I usually end up doubling it and having left overs for the next morning.

Raspberry Chocolate Bars

These taste phenomenal but I gave them a 4 because you can't make them as written. Since other readers said they were too thin in a 9x13 I made mine in an 11x7, which I think was perfect. However, there's no way you'd get 48 servings out of them, even in a 9x13. In an 11x7 my husband and I each had dessert 3 times, so basically 6 servings. The other problem I have with the directions is step #4. If you're just supposed to sprinkle the chocolate chips and spoon the raspberry mixture on top, you get a lot of crust peeking through. I ended up just spreading it all on top like a frosting, leaving some edge of the crust showing. It looked pretty and evenly distributed the toppings.

Raspberry Chocolate Chip Muffins

Unlike other readers I did not find these to be dry, but it might be because I use applesauce instead of oil in my baked goods, and that usually keeps them a little more moist. Everyone that ate these loved them, and they do taste wonderful. The only reason I rated them a 4 is because they are horribly ugly to look at. The combination of the berries and the chocolate turns them a funky gray-ish color. So I don't know that I'd serve them at anything fancy or upscale, but if you want something for family/friends and don't care about presentation then these would be perfect.
