I may be biased since this is my mom's recipe I grew up on, but I absolutely love it!

Cheesy Chicken Poblano Chowder

Reviewed: Oct. 29, 2009
Great Flavor but needs some tweaking in my opinion. Maybe less chicken broth, and adding the cheese first before the other ingredients. Definitely has potential and the spices are perfect. Will definitely try again!

This was a great simple recipe...I added an extra 1/2 Tbl to thicken up the gravy and added some garlic. Served it with baked potatoes and green beans...will definitely be making this again!

Zucchini Risotto

Reviewed: May 10, 2009
This was really great. I chopped the zucchini coarsely and added it at the beginning with the onion, I also included some coarsely chopped red pepper. The vegetables were soft but provided outstanding flavor. I highly recommend this, it wasn't nearly as difficult as I had built it up to be. I am excited to try this again with different blends of vegetables.

Basil Tomato Soup

Reviewed: Dec. 31, 2008
I hosted Christmas this year and wanted a 'light' lunch to serve and decided this soup would work with a grilled cheese. It was a hit! Everyone asked for the recipe. I did use 1/2 & 1/2 instead of whipping cream and half the butter called for to reduce the fat and added cayenne pepper to kick it up a bit. VERY easy.

Walnut Balls

Reviewed: Dec. 17, 2008
I LOVE this recipe. It is so easy and quick! I didn't do the walnuts though. I substituted almonds for walnuts and almond extract for the vanilla. SO delicious! I also only cooked them for 12 minutes, they were less dry than the whole 15 minutes. I finally managed to match the old almond ball recipe that I had been looking for!!!

Cake Balls

Reviewed: Dec. 9, 2008
The recipe was really easy to make but I found it rather difficult to get the cake balls to stay on while I was dipping them in the chocolate. So I ended up freezing them, then dipped them, and put them back in the freezer. My friends like them better frozen!

Slow Cooker Creamy Potato Soup

Reviewed: Nov. 5, 2008
This was really good. I don't know what happened to those who thought theirs was too thin-mine was almost too thick. I will have to thin the leftovers.I browned the bacon, then cooked leeks in the bacon grease. I added the leeks along with the bacon grease, keeping the bacon out to add when I served it. I also used fat-free half-and-half.I also used a box of chicken broth instead of the concentrate and water.

Egg and Sausage Casserole

Reviewed: Aug. 24, 2008
this recipe was a hit tonight for supper...i made some alterations to the original recipe though...i layered the 13x9 with the crescent rolls in the greased dish. bake at 350 for about 6 mins. as a previous cook suggested. works out well. then instead of using sausage i used thinly sliced ham & bacon bits and layered it on top of the somewhat cooked crescent rolls. i then beat 10 eggs in a bowl and added about a cup or so of co~jack cheese. poured it over the ham, bacon, and rolls. bake for 25 mins. in your pre~heated oven. when there is 2 mins. remaining i put 8 slices of american cheese over top and melted...turned out very good...family gave it a thumbs up...

Ham N Cheese Potato Bake

Reviewed: Aug. 23, 2008
my family loved this recipe...however i did some things differently. i used a 13x9 in. dish. i didn't have frozen potatoes so i used about 6-7 real potatoes diced up somewhat thin. i layered the potatoes into the greased dish and added deli thin ham & then sprinkled cheese over top. then i mixed the cheddar cheese soup, cream of mushroom, & about 1/4 cup of french onion chip dip(*i didn't have sour cream*)poured that over top of the potatoes and ham. added more cheese on top and baked at 400 degrees for 45 mins. came out perfectly...very yummy!!

omgoodness these were yummy! I changed it up a little, but I took the basic idea. I added corn and used a packet of taco seasoning instead of the spices. Also I used corn tortilas and they were perfect. Can't wait for leftovers tonight!

Rhubarb Relish

Reviewed: Jun. 4, 2008
I had never experienced a rhubarb relish before and had no idea as to what to expect. So my initial response is "way too sweet." The tart rhubarb flavor is overwhelmed by the sweetness, all I taste is sugar. I think next time I would start with one cup of sugar and add as needed. Thanks for giving me something new to try.
