if you use high quality chocolate chips, it makes the recipe infinitely better. this really does taste like traditional fudge--people will rave. It's so easy why not try it!? this was a big hit.

Love the dry mustard and parsley in these. I used a bit of olive oil instead of the butter & shortening, and 2 green onions in place of the white onion. Will definitely make again.

Caramel Brownies III

Super good, super cheap, super easy. Everyone loves them. Put a brownie in a bowl and microwave for 5 seconds (no more), add a scoop of vanilla ice cream, and taste the magic unfold! No joke. Amazing.

Blueberry Drop Cookies

Cooks Illustrated has a blueberry scone recipe that is a little tricky. This cookie recipe makes a cookie that is identical to the scones but a whole lot easier and, most importantly, more numerous!! They're delicious. I followed the recipe exactly, and before baking, I sprinkled a little turbinado sugar on the cookies for that crunchy top. I also sprinkled a little nutmeg on some of them which was very good, but the cookies were just as delicious without. I only made a few and put the rest of the dough back in the fridge so I can have fresh ones whenever necessary for the next few days!!

Creamy Au Gratin Potatoes

Wonderful!! This was my first attempt at potatoes au gratin, and I am quite proud of the results. I made them almost exactly as described, but I did cut up the onion instead of leaving it as rings. To the people that cooked the onion first afraid of it being raw: it's going into a 400F oven for 90 mins, it WILL get cooked. My cheese did separate, but I think that's just the cheese I chose. I took the foil off with 20mins to go for the browned top. Super delicious.

Coconut Milk Shrimp Soup

Great flavor! I stuck to the recipe except for leaving out one of the carrots and adding 1 chopped celery stalk when cooking the mushrooms. I agree with the previous reviewer that there wasn't enough liquid to call this a soup; the pasta just soaks it all up. I added 4 cups of veggie stock to make more of a broth. This soup is attractive and a nice way to switch up my usual rotation of meals. Thanks!

Hot Cocoa Marshmallow Cupcakes

I used actual hot cocoa mix packets in the marshmallow, and piped in a small amount of chocolate pudding into the top of the baked cupcake. These were fantastic! Served them at a bonfire. Everyone loved them!

I grew up thinking this was Goulash!! Except we didn't have the green pepper, which is an excellent addition!! I forgot all about this untill I saw this recipe. Thanks for the reminder, and the green pepper idea. I will make it like this from now on.

Just some tips... Add the chips and the dressing right before serving otherwise it can get soggy. Also, you can add whatever veggies you like, peppers, onions, olives... the list is endless.
