Fuss Free Hot Cranberry Tea

I cut the recipe in half and I still had a lot of fuss free cranberry tea! Taking another reviewer's suggestion I added some Fireball Schnapps to liven up the adult drinks a bit. This would be a great addition to an apre ski gathering!

Pumpkin Spiced Latte

I found the flavor to be delightful and loved that I could use my regular coffee and did not have to buy expresso beans! Do make sure that you brew your coffee double-strength, however. Delicious!

Nutmeg Cake

Restaurant Style Beef and Broccoli

Sometimes we find this type of meal too salty but, using low sodium soy sauce, this was excellent! I must come to terms with the fact that I just do not like round steak, however, and will use chicken next time around. Quick and simple, this is a great busy weeknight meal.

Chicken with Herb Dumplings

I didn't have baking mix, so used 2 cups of flour, 3 tablespoons butter, 1 teaspoon salt, 1 teaspoon baking powder, and 1 egg. Used milk and chicken broth until the right consistancy was achieved.

Indian Pork Chops

Seven Layer Taco Dip

Crab Tartlets

Made this for a party and it was too much egg. If I make them again I will only use one egg and less half-n-half. I could not find the phyllo shells and went by advice of another reader and used Pillsbury pie crust. My kids liked to help cut the dough and they used pressed them into my mini cup cake pan holes.

Left Bank Apple Salad

Made this for Thanksgiving, the next time I make this I will Maraschino cherries and juice to give it a little sweet taste. It was too tart for me using Granny Smith apples and I will use Pink Lady or Braeburn apples the next time also. Make sure to make the night before so the yogurt has a chance to set up.

Corn Pudding II

This turned out delicious! I had to keep it in the oven much longer than the recipe indicated (closer to 1.5 hours) in order for it to actually brown and firm slightly. In the end it turned out yummy and my family enjoyed it for Thanksgiving.

Brown Sugar and Port Cranberry Sauce

this is excellent! the ruby port gives it a nice twist. Just the right balance of sugar to tart too. I used 1/2 cup white and 1/4 brown. left everything else as is. I like a more solid sauce so I cooked it down and it set up beautifully. Not too solid but not runny either. I can see where this would be divine over a round of brie for the holidays. thanks so much!

Sugar Cream Pie III

I must have done something wrong because the pie came out like soup. It got golden on the top but it didn't set up in the middle. I baked it for an hour and let it set in the fridge for 4 hours and it still did not come out. I think a couple of eggs would have helped. Maybe I will try it the next time.

Chocolate Cream Cake

I made this cake for a dinner party. I baked the cake in 2 9inch round pans and split the layers and filled them with the filling. I then frosted the cake with whipped ganache. In making the filling I used whipping cream instead of the milk and I only used probably about 1/4 cup of it. The cake was a serious showstopper, however it really didn't have much flavor. The fliing was bland and tasteless, so I think next time I am going to add more vanilla or maybe play with the idea of poking little holes in the cake and soaking in some Bailey's/ sugar mixture (heat through to evaporate the alcohol!) I will definitely try again with modifications!

Blackened Chicken

I used this seasoning for Tilapia instead of Chicken. I also sauteed it in a non-stick pan with olive oil, as I don't have a cast iron skillet. I have a very happy hubby (sounds like a song title!) sitting next to me, he said "wow that's great fish... what'd you do to it" :-) Thanks Karena for a simple tasty seasoning for chicken or fish!

Slow Cooked Corned Beef for Sandwiches

I halved the recipe since I only had one brisket. I followed the recipe except I cooked it in a crock pot. I used a bottle of Shiner Bock beer (and yes, I teared up a little as I poured it into the pot). I cooked it on low for about 10 hours then refrigerated overnight. The next night I made Reuben sandwiches. The meat was really good, but not what I would consider Deli quality.

Best Tuna Casserole

I baked this at 375 until the cheese was bubbling (about 30 minutes). This was tasty but mine turned out a liitle dry even though I added 1/4 cup milk and 1/4 cup sour cream. I added a little more milk at the end and that helped. Next time I think I will make it with less noodles and see if that helps.
