Baked Pork Chops I

EXCELLENT! The whole family loved these pork chops. The juiciest chops we have had in a long time. I didn't change a thing in the recipe. Served with rice and the sauce was great over the rice.

Braised Balsamic Chicken

This chicken was fantastic! I changed it a little bit to suit our tastes. I cut the chicken into bite size pieces to stretch it a little farther and chopped the onions instead of slicing. I only used about an 1/8 cup of balsamic vinegar and replaced the rest with some vegetable broth I had on hand. I also decreased the amount of rosemary. We had it over penne and it was fantastic! I'll definitely make this again and again!

Raspberry Meringue Pie

We love meringue and had extra raspberries so we thought this would be perfect. I made a mistake in using a dish larger than called for (I used a 10 inch pie pan). Because of this the crust and meringue were stretched to thin. Be sure to use a 9 inch pie pan! Still it had a great taste and we enjoyed it. The crust becomes like a shortbread due to the juice of the raspberries. It is very light so if you have big eaters best to serve a more filling pie. This would be great for a ladies lunch.

Lemon Raspberry Jumbo Muffins

Excellent recipe! The batter made 17 standard size muffins. I used 1/2 tsp. lemon juice and 1 tsp. of grated lemon rind instead of lemon extract. Gave them a great lemony flavor. The raspberries get very mushy inside the muffins which in my experience is normal.

Slow Cooker Cranberry Roast

This is pretty good, and very easy. My fifteen year old made it for the family and the sitter when my husband and I were out of town, and it was a big hit with them. My husband thinks it's too sweet, but it's tender and juicy, and we'll make it again and again. I've used it with pork roast, but the kids made it with stew beef and served it over noodles.
