I'm a newlywed, so I'm trying to retrain myself from cooking for 7 (my whole family) to cooking for just two. I love baking, and am glad I have plenty of brothers-in-law to gobble up whatever I bake before my husband and I eat it all. I miss living near my family, and whenever we visit the East Coast I make sure I gorge myself on wonderful seafood. And scrapple. Always the scrapple.

Chunky Crawfish Spread

This was really good. We wanted more of a dip, so added mayo. Also added lemon juice and extra hot sauce.

Mock Tuna Salad

I don't know that I would say that it's like tuna, I think it's better. Im not a big fan of tuna salad myself, but I do love chick peas. I drained the beans and mashed them with a potato ricer. They pop out of the skins and I thought about picking the skins out, but ended up leaving them in. I followed the rest of the recipe to a t-(almost- I don't like sweet pickles, so I ended up dicing a dill pickle) and it's wonderful. I ate it plain with a sliced tomato and thought it was wonderful. Thanks for a healthy lunch/snack option.
