Chicken with Sausage and Dried Fruit

Reviewed: Feb. 20, 2006
I was excited over the sweet salty concept but it didn't work for me. The main flavor was the peppers and onions, perhaps sauteeing them prior to putting them in the crockpot would lessen their flavor a bit. The chicken was a little dry, despite being cooked in extra broth. I didn't use the broth/fruit as a sauce, it didn't look appealing. I commend whomever posted this recipe, it is interesting and original. My husband and I thought it was pretty good but the kids gave it a thumbs down.

Mock Champagne

Reviewed: Dec. 28, 2005
I tried this New Year's 2004 after many years of using straight ginger ale for kids. After the first glass, all the kids opted to pour themselves just ginger ale and by-pass the pitcher of mock champagne.

Best Ever Chuck Wagon Chili

Reviewed: Dec. 15, 2005
I thought this was really good! I have never made chili before, but it turned out great! I added 2 cloves of garlic with the peppers and onions, and used an extra can of tomato sauce. I ended up putting in about 3 tsp. of sugar to cut back on the acidity from the tomatoes. I also left out the pepper, so it wasn't very spicy, but I added a little bit of Cayenne pepper. Will definitely make again!

Good Old Fashioned Pancakes

Reviewed: Nov. 29, 2005
I thought these were great! I have never made pancakes from scratch, but I must say these sure beat Bisquick. They are very fluffy and moist. It is important that you cook them over a medium low or even low heat as to not burn them and to ensure they are cooked throughout. Very easy, and very good!

Bratwurst Stew

Reviewed: Nov. 28, 2005
I put this on my Thanksgiving weekend menu plan as a break from poultry. I thought my German in-laws would like this stew. Well, there was a LOT of unexpected hesitation, but it turned out to be a winner! I bought good quality brats and removed the skin. Next time I will also slice them lengthwise for smaller mouths. I set a brown mustard on the table & some folks dipped their brats. I also opted for potatoes over beans (per another reviewer's suggestion). There was A LOT of concern about digestive gas. Turned out not to be a problem.

Super Sausage Gravy

Reviewed: Nov. 25, 2005
This was delicious! I ended up adding about another 1/4 cup of milk, because it was so thick and I like my gravy a little thinner. But, wonderful! Will definitely make again!

Potato Coffee Cake

Reviewed: Nov. 11, 2005
Sorry, but a 5 star means make it for company and make it frequently for the family. This recipe was just sweet bread with sugar on top. Basic homemade buttermilk bread would be an equally good gift, and makes a great morning treat toasted with cinnamon suger. If you want sweet, make a coffee CAKE. If you want bread, make bread. This is good, but not a show stopper.

It doesn't get any easier than this!! Cut up the redskin potatoes, mix in a glass dish & bake. Mmmmm. Smells great cooking, & goes well with all the usual comfort food entrees.

Whole Wheat Honey Bread

Reviewed: Oct. 1, 2005
When we tried out this bread we were at first enhanced by the lovely smell! As our very first time using the bread machine, we burnt it, but even then it tasted fine and you couldn't have just one slice. We didn't do anything to the ingredients, but the facts are: no matter how burnt or underbaked you get it, it'll still taste great.

Quick Chicken Cordon Bleu

Reviewed: Sep. 27, 2005
Delicious! The sauce is reminiscent of a fondue sauce and the chicken turned out perfect! And the best part of all, it's all made in the microwave. My only complaint was that most of the bread crumbs came off of the chicken, but it was wonderful nonetheless!

Souvlaki

Reviewed: Sep. 26, 2005
Delicious! I did what another poster suggested and made two batches of marinade, one for the meat, the other for the vegetables and then skewered them seperately. It smelled heavenly. I grabbed a piece of crusty bread and started dipping it in the marinade the vegetables were in after I skewered them, it was SO good. I had to dump the marinade before I ate the whole loaf of bread. I plan on making this again and again. My husband asked if he could have this with steak and shrimp for his birthday meal.

Lemon Thyme Rice

Reviewed: Sep. 26, 2005
I will make this again but try some of the other poster's ideas for making it more flavorful. It was good but a little bit bland. I would have given it 3 stars, but since my kids ate it, it deserves 4. I plan on using more lemon, some garlic, and italian seasoning next time. I also wondered about using olive oil instead of the butter when sauteeing the rice.

Sausage Gravy I

Reviewed: Sep. 22, 2005
I have to admit, my dad makes the best gravy ever ... but this came in to a close second! Delicious! I used sage sausage and added a few drops of hot sauce at the end. I also added more salt (because I'm a salt addict) but ... yes, very very good. Next time I'll try making it with hot sausage! Yum!

Grilled Peanut Chicken

Reviewed: Sep. 18, 2005
I added about a TBSP of olive oil to the marinade to make it a little less stiff. I also grilled the sauce side down first so that the sauce got cooked on the chicken. Make sure you keep an eye on it while grilling if you do it this way. I will try what another rater suggested and marinate next time. This was delicious.

Baked Pork Chops I

These were very good. I baked them for 30 minutes without the sauce, then added the sauce and baked an additional 30 minutes. I was skeptical about the gravy since it had so few ingredients, but it came out delicious.

Garlic Chicken

Reviewed: Sep. 17, 2005
This was delicious. I used chicken tenderloins and let them sit in the garlic and oil for an hour or so. I also had to use Italian Breadcrumbs because that was all I had. This recipe came out really well, I enjoyed that it was crispy like fried chicken without being fried.

Anniversary Chicken I

Reviewed: Sep. 12, 2005
I made a couple of changes. First I marinated the chicken breasts in my own teriyaki marinade with low salt soy sauce. I browned the chicken breasts in a pan and then added about half a cup of the marinade and let the sauce cook down. I followed the rest of the recipe as stated and it was delicious. Next time I am going to pound the chicken breasts thin, marinate, then grill them. Then I will put the toppings on and make a sandwich out of this with ranch as a sauce on the sandwich.
