Molasses Sugar Cookies

I dipped these in colored sugar for Christmas, and they were quickly gobbled up. I made the dough and then refrigerated it for 2 days before I got around to baking them. Baked for 9 minutes for slightly chewy cookies. Will definitely add to the cookie rotation.

Tiramisu Layer Cake

A real hit at our holiday dinner party today. A little time-consuming, but well worth the effort...pretty presentation. I "made" the marscarpone from the recipes posted by other reviewers, but otherwise followed the recipe. Used "heavy whipping cream" instead of heavy cream, as that was all I had available. Watched the beating time, though, and it turned out great. Will do again. for special occasions.

Pumpkin Chili Mexicana

It's still simmering and I already love it! My package of extra-lean ground turkey was just over a pound, but I used it all. I used light kidney beans and added a can of drained black beans, as well as a whole can of corn. Like another reviewer, I added some extra liquid, but I used low-sodium chicken stock. I also left out the salt. It smells wonderful and looks so pretty! Can't wait for supper!

Sloppy Joe Sandwiches

Apple Oatmeal Crisp

Yes, I will make this crisp again, it is excellent! I used Splenda brown sugar blend (you only use half as much when using this product) and the taste was wonderful. I cut out the white sugar entirely and tossed the apples (MacIntosh) w/ about 2T. of the brown sugar blend along w/ the cinnamon. Served this with sugar-free vanilla ice cream and it made a wonderful fall treat for the diabetic in our family. Thanks for a great recipe Dave!

Green Bean Bundles

These are fantastic... everyone loved them at our family reunion and I came home with an empty dish. I used minced fresh garlic instead of garlic salt (used 4 cloves for 2 lbs. of beans), used low-sodium soy sauce and reduced the Worchestershire to 3T. I just didn't want them to taste too salty and those little bundles came out just right IMO :) And yes, marinating the bundles overnight really helped. What a great recipe.. I know I'll make this often!

Roasted Tomatillo and Garlic Salsa

Excellent salsa! I also didn't add any water or salt and pepper, just wasn't needed. I did make a double batch and it went quickly. Part of it was used to make my version of chicken verde... I saute onions & peppers in EVOO, place in a baking dish, top w/ skinless, boneless chicken breast halves, cover w/ a mixture of equal parts of this salsa and sour cream, then sprinkle w/ shredded Monterey Jack cheese and bake at 350F. for 40 min. I served this over steamed rice w/ chopped cilantro to garnish... got a great response from my dinner guests..thanks for a great recipe, SairajB!

Pizza Casserole

We love this recipe. Tastes sooo good. I omit the onions and add onion powder just because the hubby and I dont like biting into onions. Add sausage and use presliced pepperoni which I cut into quarters. We love cheese, so I layer slices of mozz in and we add more to the top. Its become a weekly staple in our house.

Chocolate Cavity Maker Cake

Hi there Caitlin! This is THE BEST chocolate cake I have ever made - period. I did not have the coffee liqueur so I used Godiva chocolate liqueur. I am definitely going to buy the coffee one ASAP to have on hand as I absolutely love anything w/coffee in it. This recipe is such a keeper that I will also have to put it into a special folder on my computer so that I will always have it somewhere! I adore this cake. Thank you, thank you for the recipe! Baked Zucchini

Made this recipe as our garden is really producing squash. I added sliced red potatoes with the skin on and some cajun seasoning and crushed red pepper, no oregano. It was fantastic, spicy and somewhat hot so go easy on the crushed red pepper. Thanks for a great basic recipe for yellow squash and zucchini.

Banana Sour Cream Bread

Pineapple Chicken Tenders

Delicious! I didnt want to do the grill for just two of us so I made it on the stove. Used a little less soy sauce. I marinated for an hour and then dumped it all into the wok. Served it over white rice with some of the sauce and pineapple chunks. It was absolutely delicious!

Chicken And Apple Curry

Delicious curry! I also diced the chicken and cooked the entire dish on the stovetop. Next time I'll try Granny Smith apples as another reviewer suggested. I used Gala apples this time and threw in a handful of raisins as well. Also I used chicken stock instead of broth to reduce the salt and soy instead of regular milk. Served over couscous with chopped peanuts and coconut as toppings. Made an easy meal that looked like I'd really fussed... Thank you ChristyJ!

Dijon Garlic Salmon

Loved this easy recipe. Only changes I made were to use fresh tarragon from the garden (about 3T., finely chopped for 6 salmon fillets) and a Vidalia onion instead of red because that's what I had on hand. Made this for company and they really enjoyed it.

Chicken Enchiladas II

I love these!! The first try, my husband made a comment saying they werent real enchiladas. Then he tried it and wouldnt stop saying how great it is. He then even went to work and talked about how delish it is. The only changes I use - I use taco seasoning on the chicken and then I add a little extra to the sauce. And I use cream of chicken soup instead of mushroom. Its absolutely delicious! We eat this meal once a week.
