Caramel Cake I

This is a great recipie, however it is not for the novice baker. I wish inexperienced cooks would not lower recipe ratings because of their ineptitude. If you the majority of the ratings are positive, isn't that a pretty good indication that perhaps you did something wrong?

Sweet Potato Surprise

I didn't use the white sugar at all. I also used 7 sweet potatoes, and 3 tbsp butter :) And No coconut because I didn't have any. I think these proportions fit best with it being a side-dish, so it doesn't compete with the pies! I whipped it all in the foodprocessor and added marshmallows last. It was great!

Detroit Hot Honey Wings

First time making this recipe and this will be the last time. I followed the recipe directions as provided except I only had 1.5 pounds of wings so I cut back to 2/3 the recipe (Honey, butter and Frank’s original hot sauce plus one tablespoon Tabasco) which is a little less than 3/4. This recipe had zero heat and way, way too much sweetness. WHAT WAS I THINKING??? I normally will use 1/2 cup Frank’s for every 1/4 cup butter plus a little Tabasco and ZERO sweetener of any kind. Also, the honeyed wings do tend to burn easily on the grill so be very careful and keep watching.

Pumpkin Sheet Cake

Very good cake. I used 1-1/2 times the recipe to make two 9 x 13 cakes. I also added a little ground cloves and ginger for extra spice flavor. Easy to make and delicious.

Teriyaki Marinated Chicken

This recipe produces a somewhat sweet flavor, which adds a lot to the flavor of the chicken. I marinated for 4 hours and broiled for about 6 minutes per side. I boiled the marinade for 5 minutes then added a little corn starch and water to thicken and continued heating on low for about 5 additional minutes. I put a little marinade on the chicken before broiling and then a little additional marinade when I turned. I served this and the marinade with Basmati rice and red onions. For the marinade, which I doubled, I used orange juice instead of pineapple juice as I cannot have pineapple juice and I also added a little ginger paste to the recipe. This and a nice tossed salad make a wonderful dinner. Thanks!

Butter Bean Burgers

These were great. Had to rethink my cookiong becuase my sister needs to eat better less greasy foods. So I baked these in the over instead of frying in oil. Turned out nice. Also used bread crumbs instead of crackers. Thanks for the recipe.

Baked Ziti III

Different than I was expecting, but fantastic! After reading many reviews, I tossed the pasta in the sour cream, browned my ground beef with italian seasoning, salt, & pepper, used 1 jar of italian sausage spaghetti sauce & 1 jar of mushroom spaghetti sauce, and increased both cheeses by about 2 ounces. I made it all in 1 deep 9" x 13" pan and it barely fit. The result was very creamy, flavorful ziti - a ton of it! My husband and I ate it for 4 meals & still had nearly half a pan left. Next time I will try separating it into 2 smaller pans and maybe put some mozzarella on top (not just the parmesan) for a browned cheesy crust. Fantastic recipe!

Easy Shake and Bake Chicken

Excellent flavor with the addition of garlic powder & onion powder. Next time I'll try just butter spray & a cast iron skillet in the oven, because I ended up with soggier crust than I like. Still tasty!

Tangy Slow Cooker Pork Roast

I had a 1.88 pound boneless Boston Butt roast which I cooked in my crock pot for about 8 hours on low. I used the original recipe as is except added a little more Tabasco sauce. I also used a large white onion. This turned out to be a very tasty, not too spicy pork roast with a very pleasant pork flavor. Thank you K.

Butternut Squash Soup

Fluffy Whole Wheat Biscuits

These biscuits turned out perfect--definitely fluffy, light, and delicious. They were very easy to make as well. I used all white flour because that's what I had. And I made them as drop biscuits to save time. I will make these again.

Beef Stew VI

Very good, easy beef stew. I added about 1/4 c. red wine vinegar which brightened the flavor. And I added a little bit of thyme. I served it with homemade drop biscuits. Delicious! My husband, friend, and friend's 1-year old all loved it.

Rempel Family Meatloaf

This was a nice change from standard tomato sauce/ketchup style meatloaf. I was short on a few ingredients, so had to change the recipe: only used 1 egg, used about 1/3 cup of half ketchup/half tomato sauce mix, added a couple teaspoons of worchesterchire and a dash of liquid smoke (per previous reviewer's suggestion), substituted a generous handful of steak seasoning, onion powder and garlic powder for the onion soup mix, and added about 1/4 cup more crackers. I put half the meatloaf in the pan, layered 4 slices of pepperjack on top, then added the rest of the meat. Topped with a tomato sauce/honey/worchesterchire glaze and baked 60 minutes. The result was a meatloaf that tasted cheesy, slightly spicy, and char broiled, and was more firm than traditional meatloaf. My husband doesn't like mushy tomato-y meatloaf, so he loved this. Overall, a great recipe to make as is or play with. Thanks Rempels!

Crispy Rosemary Chicken and Fries

Very good, easy recipe. I made 8 chicken thighs on one baking sheet and 6 large potatoes on another sheet. I used 1/4 cup oil on the fries and skipped the oil on the chicken, since it had plenty of fat from the skin. I basted the chicken during the last 15 minutes with the juices. It was delicious and made the house smell great, and I only used dried rosemary. I think I'll try fresh next time.

Pumpkin Cream Cheese Muffins

These are good but I think they would be better with more spices. I would like to try adding ginger, cloves, and nutmeg to the pumpkin batter. This recipe made 24 muffins when I made it. I wasn't able to keep the cream cheese filling from touching the sides because it was somewhat runny, I think from the egg. But they turned out fine anyway. I left the nuts out of the topping because I didn't have any. It was good without, but I'm sure they'd made a nice addition.
